I think one of my favorite times of year to gather. The bounty of colorful edible blooms gets me into the making spirit.
Plus I get to whip up my colored egg recipe, each year experimenting with new herbs and ingredients that put a twist on the old ‘deviled’ egg.
You can use natural ingredients like red cabbage, beets, blueberries, and tumeric to dye your entire hard boiled egg. I usually let mine sit in the boiled colored water for about 2 days, after peeling them, so the actual egg whites get dyed.
✨Tip: adding vinegar to the dyed water will change the color and also help the color stick to the eggs.
Inside topping: Fage yogurt of your choice (I used 0%), mustard greens, fennel greens and garlic. Salt, pepper, and cayenne or paprika to taste.
Top with your choice of spring edibles, here I used violets, dandies, and pansies. Enjoy!!
