I was diagnosed with Fibromyalgia Syndrome in 1993, after moving to Chicago to pursue my culinary career. I have lived in constant, chronic Fibromyalgia pain for over 20 years, and suffered with migraines, as well. I was later diagnosed with moderate cervical dysplasia in the fall of 2009 and underwent a total hysterectomy to aggressively treat the condition. Thinking that life would be better after the procedure,I discovered that was not the case. I began to experience extreme abdominal pain and bloating, as well as increased weight gain. Seeking medical attention and undergoing many tests, I was told my thyroid was fine and to push myself away from the table and exercise. After going to a GI specialist and being diagnosed with Fatty Liver Disease and Barrett's Esophagus (a precancerous condition), I was again told to change my diet, lose weight and exercise. I was given a pamphlet that outlined the FDA food pyramid and encouraged to eat foods as outlined. I took the doctor's advice, incorporated the "diet" and started exercising, only to continue to put on more weight. It took the GI specialist another 2 years to discover that my gallbladder was almost dead and this had more than likely been an issue, all along. So, I underwent gallbladder removal surgery, yet things conditioned to decline. In 2012, I started having what my pain management physician referred to as fasciculations. These are tiny tremors that occur all over your body and seen in individuals with MS and ALS. My pain management doctor urged me to have an MRI, as he was at a loss as to what was going on in my body. In December 2013, two days prior to my 46th birthday, I walked into a functional medicine clinic at the urging of a friend. Sick, tired, hurting and miserable, I had resigned myself to the fact this was how my life would be. Blood was drawn and all the diagnosis were discussed. The practitioner told me that she wanted me to immediately stop eating dairy, soy, gluten and sugar and to only eat whole, real foods. As a chef, I was blown away at these demands and thought how could this even be possible, yet I soon realized there was nothing to lose and it was worth at least trying. I immediately implemented these suggestions, "detoxed" my pantry and refrigerator, purchased nothing but whole, real food and started an intense detox program of protein shakes, supplementation and loads of water. Three weeks later I received a call from the practitioner stating that I indeed had a thyroid condition called Hashimoto's Disease, which is auto-immune hypothyroidism, in addition to having a Vitamin D deficiency. Mega doses of Vit D were ordered, along with prescription meds to treat the Hashimoto's. I was also informed that she had a condition called "insulin resistance", which is a precursor to Diabetes. Nineteen months later, I have lost a total of 40 pounds, and maintained it. In addition to the weight loss, the constant chronic Fibromyalgia pain has disappeared, along with the chronic migraines. The fasciculations are also non-existent. Liver enzymes and thyroid levels are "perfect" (my practitioner's words). Cholesterol and ferritin levels have lowered, as well. Another happy note is that my soon-to-be sixteen year old son is now off all four of his ADHD medications, which he had been taking for approximately 10 years. I am a trained Organic Chef and hold a BA from Belhaven University in Social Work with an emphasis in Christian ministry. I am also a Wellness Coach who is committed to helping individuals transform their lives through mentoring, encouragement, support and education. I am dedicated to teaching clients how to promote an increased level of the mental, physical and spiritual aspects of life, as I believes that the mind, body and spirit are all connected; if one area is off-balance, the whole system is off-balance. This is a personal "organic foods" chef service, as well as a wellness coaching service, offered to individuals who are ready to implement a healthier lifestyle, while needing extra encouragement and support to reach these goals. My programs encompass life skills training, mentoring, personal chef services (which include recipe and menu development), as well as Arbonne products in the list of services offered. I focus on educating the client in terms of incorporating a clea, real-food approach to life, as well as time management and preparation skills in order to reach healthier lifestyle goals.
