These pancakes are current favorite in our house. 4 eggs, 1 cup cottage/ricotta cheese, 1 cup old fashioned oats, 1tsp baking powder (aluminum free), a splash of vanilla extract, 2 tbsp of maple sugar (optional). Throw all this in the blender, and cook in a skillet or griddle. They keep in the fridge for several days and are pretty good reheated! And, no I did nit eat these this morning still carnivore and feeling great. Update soon!
