Lions Mane and Nameko (Butterscotch mushroom) are on deck! You all know Lions mane is awesome, but did you know Nameko mushrooms are huge in Japan? They are also a main ingredient in Miso soup as their waxy/gelatinous caps help to thicken soups. Nameko have a short shelf life though, which is why they aren’t shipped to the US often. They should be used within 4-5 days of harvest. Nameko is said to have a rich and slightly fruity taste, the caps are covered in a thin protein rich gel/wax to keep them from drying out in the wild. They cook up like a champ though and go good in anything you’d normally put mushrooms in.
