Family Night at the The Lemon Lounge - Indoor Play & Enrichment will be cancelled this evening but I wanted to share January's Healthy Recipe - Tofu Scramble!
Ingredients
* 1 package extra-firm tofu
* 1 onion
* 2 cloves of garlic
* 1 bell pepper
* 1/2 tsp turmeric
* 1/2 tsp curry powder
* 1 packet veggie bouillon
Optional: Top with 2 tbsp of nutritional yeast
Prep
1. Use a tofu press to drain the tofu and pat it dry. Crumble the tofu with your hands or a fork into bite-sized chunks.
2. Heat a little oil in a pan. Add onions and peppers and sauté for 3 minutes. Add minced garlic and sauté for about 2 additional minutes.
3. Add the tofu to the pan and sprinkle in the turmeric, curry powder, and veggie bouillon.
4. Cook for 7 to 10 minutes until the liquid is absorbed. Season with salt and pepper to taste.
