This is Sarah: I have found a new go-to plant based recipe that is super easy, fast and so yummy.\! A good use for some of those garden tomatoes on your counter and some healthy kale (we all need to add more dark leafy greens to our diets). Throw all the ingredients into a pan and 30 minutes later - delicious dinner. We topped it with some fresh basil from the garden, some vegan parmesan and balsamic drizzle. Yum.

This One-Pan Farro with Tomatoes and Kale is a straight-up DREAM! Rustic farro cozied up to cherry tomatoes, onions, garlic, and kale. So good and so wholesome!

Here's a delicious summer recipe to try - great for all the miscellaneous veggies that build up in your fridge and you won't even miss the meat (or if you must have it - use a small amount, more as a condiment/flavoring).

This oil-free fried rice features farro instead of rice, plus kale and a zesty stir-fry sauce that comes together in just 30 minutes. Top with sesame seeds, and enjoy!
