🥗 March Recipe: Fresh & Flavorful Turkey Taco Salad⠀

March is the perfect time for lighter, fresher meals that still feel satisfying. This turkey taco salad is a great example—it comes together in under 30 minutes, uses simple ingredients, and delivers bold, delicious flavor in every bite. With crisp lettuce, seasoned turkey, colorful vegetables, and a creamy cilantro-cashew dressing, this salad is anything but boring.⠀

🛒 Ingredients:⠀

For the Salad⠀
➖1 pound ground turkey 🦃⠀
➖about 4 tablespoons taco seasoning 🧂⠀
➖4 cups chopped romaine lettuce 🥬⠀
➖1 cup corn 🌽⠀
➖1 cup grape tomatoes, halved 🍅⠀
➖1 can black beans - 15-ounce - drained and rinsed 🫘⠀

For the Dressing⠀
➖3/4 cup cashews - soak in hot water for 30 minutes ⠀
➖3/4 cup water⠀
➖1/2 cup fresh cilantro⠀
➖2 tablespoons lime juice⠀
➖1/2 teaspoon garlic powder⠀
➖1/2 teaspoon salt⠀

For Toppings⠀
➖1/3 cup chopped cilantro⠀
➖1 medium avocado, sliced⠀

1️⃣ Place a non-stick pan over medium heat. Add the ground turkey and cook, breaking it apart as it browns, until it is fully cooked.⠀
2️⃣ Mix in the taco seasoning along with 1/4 cup of water. Stir thoroughly, lower the heat, and allow the turkey to simmer for about 10 minutes so the flavors can blend.⠀
3️⃣ Prepare the dressing. Add the soaked cashews, water, lime juice, cilantro, salt, and garlic powder to a blender and blend until smooth. If needed, add a little extra water to achieve a creamy dressing texture.⠀
4️⃣ In a large bowl, combine the chopped romaine lettuce, halved tomatoes, corn, black beans, and the cooked turkey.⠀
5️⃣ Pour the desired amount of dressing over the salad and gently toss everything together until evenly coated.⠀
6️⃣ Serve in individual bowls and top with fresh chopped cilantro and sliced avocado.⠀
