Thoughtful nutrition is a form of self-care. 💚

This Spine-Healthy Sheet Pan Meal combines salmon for its anti-inflammatory omega-3s, sweet potatoes for muscle and nerve support, and beets to help boost circulation and recovery.

Ingredients:
-Salmon fillets
-Cubed sweet potato
-Roasted beets, sliced
-Olive oil
Salt and pepper to taste
-Plain Greek yogurt
-Lemon
-Honey
-Dill

Directions:
-Preheat oven to 400°F. Toss sweet potatoes with olive oil, salt, and pepper. Roast for 20–25 minutes until tender.
-Add salmon to the baking sheet during the last 12–15 minutes of roasting. Season lightly and roast until flaky.
-Add the beets to the pan during the final 5 minutes.
-Mix Greek yogurt, lemon zest, juice, and honey to create a light drizzle.
-Plate salmon over sweet potatoes and beets, finish with yogurt drizzle and fresh herbs. Enjoy!
