For National Pie Day we wanted to share a recipe for a classic apple pie. Try it out and let us know what you think!
Classic Apple Pie Recipe
For the crust:
2 ½ cups (315g) all-purpose flour
1 tsp salt
1 tbsp sugar
1 cup (226g) unsalted butter, cold and cubed
6-8 tbsp ice water
For the filling:
6-7 medium apples (Granny Smith, Honeycrisp, or a mix)
¾ cup (150g) sugar
¼ cup (32g) all-purpose flour
1 tsp ground cinnamon
¼ tsp ground nutmeg
1 tbsp lemon juice
2 tbsp unsalted butter, cut into small pieces
Optional topping:
1 egg (for egg wash)
1 tbsp sugar (for sprinkling)
Instructions:
1. Prepare the crust:
In a large bowl, whisk together flour, salt, and sugar.
Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Gradually add ice water, one tablespoon at a time, mixing until the dough comes together.
Divide the dough into two disks, wrap in plastic, and refrigerate for at least 1 hour.
2. Make the filling:
Peel, core, and slice the apples into thin slices.
In a large bowl, combine apples, sugar, flour, cinnamon, nutmeg, and lemon juice. Toss to coat evenly.
3. Assemble the pie:
Preheat oven to 375°F (190°C).
Roll out one disk of dough on a lightly floured surface to fit a 9-inch pie pan. Place it in the pan and trim the edges.
Pour the apple filling into the crust and dot with small pieces of butter.
Roll out the second dough disk and place it over the filling. Seal and crimp the edges. Cut slits in the top to allow steam to escape.
4. Optional topping:
Brush the top crust with a beaten egg and sprinkle with sugar for a golden, shiny finish.
5. Bake the pie:
Place the pie on a baking sheet to catch any drips.
Bake for 50-60 minutes, or until the crust is golden brown and the filling is bubbling.
Cool for at least 2 hours before serving to allow the filling to set.
