It's now 2024 and Kellogg’s still sells several cereals with artificial colors in America, targeting young children. Broccoli salad for the win! This is an incredibly delicious way to pack in a lot of nutritious fiber that will make your gut microbiome happy, happy, happy. Not only is broccoli loaded with vitamins and minerals, but when you toss it into a fresh salad with some tasty add-ins like cranberries, sunflower seeds, and a tangy dressing, it becomes a flavor explosion! Plus, it's a perfect dish for any occasion, whether you're meal prepping for the week, bringing a side to a potluck, or just looking for a refreshing and healthy lunch option. Enjoy every crunchy, satisfying bite!
RECIPE
Salad ingredients:
1 pound broccoli florets, raw or blanched
1 red apple, chopped
3/4 C dried cranberries or raisins
1/2 C almonds, sunflower seeds or pecans
1/2 pound uncured bacon, chopped and cooked crispy
1/2 C red onion, finely diced

Dressing
1/2 C mayonnaise (seed oil free such as Chosen Foods brand)
1/2 C plain yogurt
2 1/2 T apple cider vinegar
1 1/2 T organic, raw honey
1/2 T parsley, chopped
1/4 tsp garlic powder
1/4 tsp salt

Cut/chop salad ingredients as instructed.
Whisk together dressing ingredients
Combine and serve

It's understandable if you're overwhelmed by the vast array of chemical-laden, preservative-packed, ultra-processed foods that fill our grocery store shelves. You deserve to feel your best, and a great way to start is by gently shifting your focus towards more nourishing foods. Try to gradually reduce your intake of foods with added sugars and industrialized fats. When you start to make these changes, you'll feel better and reaching your health goals becomes much more attainable.
