So delicious Shrimp and Eggs Fried Rice

Ingredients:
3 cups cooked white rice (day old)
2 tablespoons oil
1 1/2cups frozen (thawed) peas and carrots
1 onion, chopped and diced
1 tablespoon minced garlic
1 cup frozen shrimp peeled and deveined
2 eggs, beaten
3 tablespoons low soy sauce
1 tsp sesame oil
Garnish (green onion)

Steps:
In a pan, add oil, fry the shrimp till cooked. Set aside. In the same pan, fry the scrambled eggs. Set aside. In the same pan, add a little bit of oil, add onions and saute till tender. Add garlic and saute till fragrant. Add the rice, peas and carrots and mix well. Cook for 2-3 minutes. Then, add the soy sauce, sesame oil and the fried shrimp and eggs. Mix well till thoroughly combined. Cooked for another minute or 2 until piping hot. Remove from heat. Garnish green onion if any. Ready to serve. Enjoy!
