Fall is here, and busy season is upon us! That's one of the many reasons we love this juicy, delicious, and easy-to-make pork shoulder pot roast recipe brought to you by our Mastering Pastured Meats in the Kitchen online course at School of Traditional Skills, taught by Shannon Hayes.

Here's the Recipe:

INGREDIENTS

• One pork shoulder roast, any size, ideally 3-4 lbs
• 1 Clove minced garlic
• 2 tbsp coarse sea salt
• 2 tsp ground black pepper
• 2 tbsp dried parsley or ¼ cup diced fresh parsley (you can also use thyme, oregano, marjoram, rosemary, or any combination thereof)
• 4-6 tbsp olive oil

RECIPE

• Pat the roast dry with a paper towel.
• Combine the remaining ingredients in a small bowl.
• Add enough olive oil to make a runny paste. Massage the paste into the meat.
• Set it in the slow cooker with the fattiest side facing up.
• Cook on low for 6-8 hours or until the meat flakes easily with a fork.
