Three ingredient lazy girl dinner (with optional upgrades) 😋

• Cooked pasta (opt for chickpea pasta for a boost of protein)
• Pesto (premade is faster but you can also make your own)
• Grilled chicken (I will buy the premade grilled chicken from Sam’s for busy weeks or grill your own)

Mix all together and you’ve got an easy, balanced dinner (that make amazing leftovers) in under 10 mins!
Pasta -> carbs/fiber
Pesto -> fat/satiety
Chicken -> protein

Optional upgrades
> For this batch in the video, I added pickled artichokes
> Mozarella pearls
> Fresh basil
> Sun dried tomatoes

This weekend we had the sweetest visits with one of my dear friends and fellow private practice dietitian (& mom & sourdough enthusiast 😁 & forever Miss Louisiana), Hope Frugè ♥️

Throwback to TEN YEARS 🫢 ago to when we met— I was actually her client before I became a dietitian. I was a sophomore in college struggling with body image (and the infamous freshman 15), and our relationship/mentorship was a big reason why I stayed the course.

I knew in high school I wanted to be a dietitian, but I wasn’t sure the impact I wanted to make as a dietitian yet. It’s because of relationships like Hope and many other passionate dietitians, I was inspired to pursue building my own private practice to help people and become the kind of dietitian I once needed.

I love to tell my current clients this: I was a patient first before I became a dietitian. ♥️

Friendly reminder from a dietitian:
🧀 Dairy is okay for many people and offers many benefits like protein and probiotics in yogurt (unless you’re lactose intolerant or have an allergy)
🍞 Gluten isn’t harmful for most people (unless you have celiac disease or an intolerance)
🥤 Diet/zero sugar sodas can fit in moderation (these are also a great option to help someone come off full sugar sodas, which promote inflammation and excess calorie intake)

Nutrition doesn’t always have to mean cutting out the foods you enjoy. I like to prioritize balance over restriction.

Funny story… I accidentally left my bread dough sitting over the dishwasher while it ran overnight, and apparently the countertop got warm enough to make the dough rise WAY faster than normal 😆 it was bubbling over the container the next morning (and it was in a very large container) 😅

The dough became too airy and over-risen for a regular loaf of bread, but luckily that texture works really well for focaccia, which is one of my faves! 😍 I added basil pesto before baking, and it was delishhh 😋

Moral of the story- when life gives you over-fermented dough, still bake it 🤷🏼‍♀️🤪

The side dish I can’t stop making lately- STREET CORN 😍🙌🏼🌽

I like to swap out sour cream for a combo of nonfat plain Greek yogurt and olive oil mayo for some heart healthy benefits ♥️😋

Ingredients:
• 1 (32 oz) bag frozen corn
(or about 6–7 cups fresh sweet corn kernels)
• 10 oz crumbled cotija or queso fresco
• 5 oz plain nonfat Greek yogurt
• 1/2 cup olive oil mayo
• Juice of 1–2 limes
• Chopped cilantro
• Garlic salt, to taste
• Chili powder, for topping
• Olive oil, for cooking

Directions:
1. Heat a drizzle of olive oil in a large skillet over medium-high heat. Add corn and cook until charred and browned, stirring occasionally. Set aside to cool slightly.
2. In a large bowl, mix together corn, cheese, Greek yogurt, olive oil mayo, lime juice, cilantro, and garlic salt.
3. Top with extra cheese, chili powder, cilantro, and a squeeze of lime.

Save for later 💯

Having the best Mother’s Day weekend with my favorite guys!! Paul planned a little picnic for us to enjoy at Cypress Black Bayou. Marshall gave us a good nap, so we were able to enjoy a stroll after our meal, which was chicken salad from Chicken Salad Chick 😋 My favorite chicken salad from there is hands down jalapeño Holly 🙌🏼 what’s your favorite?

A hearty, balanced breakfast, for mom 💟 recipe ⤵️

INGREDIENTS
1/2 cup cottage cheese (4%)
1/2 cup cheddar cheese
1 cup spinach
1 chopped bell pepper
1/4 cup bacon bits

INSTRUCTIONS
1. Preheat your oven to 350°F, lightly grease a donut tin.
2. In a food processor, add eggs, cottage cheese, and cheddar cheese. Process until smooth. Then add spinach, bell pepper, and bacon bits. Pulse until just combined.
3. Evenly divide the egg mixture into 6 donut molds, filling each about ¾ full.
4. Place the filled muffin tin inside a larger baking dish or cooking sheet. Carefully pour water into the dish until it reaches halfway up the sides of the muffin tin.
5. Bake for 20-25 minutes, or until the tops are set and slightly golden. A toothpick inserted in the center should come out clean.

Made sourdough discard pizza topped with basil from our little container garden 🌿🍕

There’s something really satisfying about learning how to use what you already have instead of wasting it. Using sourdough discard, growing a few herbs at home, and making food from scratch may seem small, but it’s a simple way to be a little more sustainable, save money, and feel more connected to your food.

Plus… fresh basil on pizza just tastes better 😋

A little over 5 years ago, I passed the RD exam and officially became a registered dietitian! 🥲 here’s a throwback photo, can you tell how excited and relieved I was!? I never liked standardized tests 😅 the anxiety!

Since then, I’ve had the opportunity to work in clinical nutrition, media, private practice, and now in this season of life as a new mom, continue building a business that helps people create healthier habits in a realistic and sustainable way.

I’m officially beginning to open my schedule back up for new patients again, and I’d truly love to work with you!
