Our Rest to Digest gluten-free retreat at Limina Renewal Center last weekend was a phenomenal chance to rejuvenate ourselves and connect with amazing new friends who truly “get” gluten-free living. We enjoyed beautiful, spacious rooms, a weekend of delicious GF meals, yoga, massage and plenty of nutrition tips for a healthy GF life. Thank you to this wonderful group for making teaching such a joy for me—I can’t wait to plan more retreats!

Welcome to the long-awaited 5-module course on celiac disease, a soup-to-nuts comprehensive review of medical nutrition therapy for the registered dietitian or nutritionist counseling patients with gluten-related disorders.

I was honored to write Module 5 ( Non-Responsive Celiac Disease) with Dr. Amelie Therrien. We cover the medical and nutrition assessment, treatment, and monitoring of the patient who is not responding to the gluten-free diet. We cover potential underlying causes, such as microscopic colitis or refractory celiac disease, as well as the most current and promising drug studies and the resources clinicians use to gauge potential exposure to gluten.

A big thanks to my wonderful colleagues who completed this project with me: registered dietitians Amy Keller, Mary Kay Sharrett, Anne Lee, Meghan Donnelly, Jessica Lebovits, Cheryl Harris, and gastroenterologists Dr. Amelie Therrien and Dr. Alessio Fasano.
