🍂 Pumpkin, Red Lentil & Coconut Curry 🍂

I recently made this delicious curry during a retreat and it was a hit! As the weather gets cooler and the days shorten, our bodies start to crave warm, grounding recipes. This is the perfect meal for the season, and I’ll definitely be making it again soon.

It’s simple to make and packed with flavor. Plus, there are so many seasonal health benefits within the ingredients. The pumpkin strengthens digestion and supports Spleen Qi, while the warming spices like ginger, turmeric, cumin, and garam masala move Qi, dispel cold, and boost circulation. The coconut oil, coconut milk, and sesame seeds add yin-nourishing creaminess, keeping the lungs and skin from drying out as the weather cools.

Ingredients:
• 1 tbsp coconut oil
• 3 cloves garlic, minced (optional)
• 1-inch piece fresh ginger, peeled & minced
• 1 tsp ground turmeric
• 1 tsp ground cumin
• 1 tsp curry powder
• 1/2 tsp ground coriander
• 1/2 tsp chili powder
• 1/2 tsp garam masala
• 1 cup red lentils
• 1 lb pumpkin (~2 cups), diced
• 1 (14 oz) can crushed tomatoes
• 2 cups vegetable broth
• Salt & pepper, to taste
• 1 (14 oz) can full-fat coconut milk
• 2 tbsp tahini (or other nut/seed butter)
• Juice from 1/2 lemon
• 3.5 cups fresh spinach
• Sesame seeds, for sprinkling
• Cilantro, for serving
• Basmati rice, for serving

Instructions:
1. Heat the coconut oil in a large saucepan and add the garlic and ginger. Cook, stirring, for a minute.
2. Add the turmeric, cumin, curry powder, coriander, chili powder, and garam masala. Cook, stirring, for a minute or until fragrant.
3. Add the lentils, pumpkin, canned tomatoes, and broth. Stir to combine, then add salt and pepper to taste.
4. Bring to a boil, reduce the heat to low, and cover. Simmer for 25-30 minutes, until the lentils are cooked through and mostly softened and the pumpkin is tender.
5. Remove the lid, increase the heat, and add the coconut milk, tahini, and lemon juice. Cook, stirring, for about 5 minutes more.
6. Turn off the heat and stir in the spinach. Serve with cooked basmati rice and sprinkle with sesame seeds and cilantro. Serves 4.

A Deeper Look at Gossip:

Gossip is all around us, and sometimes it can be hard not to get sucked in, especially when others are piling on. But the truth is, we never feel good about it afterwards. There is a kind of aftertaste.

The Vedic perspective is that gossip comes from stress. It’s not really about the subject of the gossip. It’s a report on the state of consciousness of the person speaking. When someone gossips, they’re showing the stress they’re carrying and how it needs to leak out somewhere by being projected onto others. In that way, gossip is never actually personal.

A helpful tool we can use in these moments is the phrase: “Well, they can’t be all bad.” If someone is speaking negatively about another person, you can gently introduce that perspective. It diffuses the situation and usually makes the conversation switch gears, bringing the energy back toward compassion.

When we embody a different way of being ourselves, one that meets gossip with compassion and sees stress for what it is, we model a way of living that others can feel and learn from. And if we slip back into old gossiping habits, that’s okay. Notice how it feels, taste that aftertaste, and let it build your resolution to choose differently next time.

With a regular practice like Vedic Meditation, over time, gossip starts to lose its appeal. It feels like junk food instead of a nourishing meal. Our speech becomes more uplifting and clarifying instead of criticizing and dividing. If you’re interested in learning a technique that enhances life in this way, my next course is October 23-26. It was such a joy to celebrate Guru Purnima last night at the .

Purnima: full moon

Guru Purnima is a night to honor the teachers who have guided us on our path and reminded us that all of the light we seek is within.

This celebration occurs once a year on the full moon after the summer solstice. It is a time to look back at the previous 12 months, reflect on how we’ve grown, and recommit to our continued evolution.

We started the evening with a special gratitude ceremony. Each student got to offer a flower at the end of the ceremony and make a “boon”, or a wish, for the year ahead. This wish is meant to benefit both the individual and the collective.

Then we meditated together followed by a group discussion. We also ate yummy desserts to symbolize the sweet and fruitful guidance we’ve received from our teachers.

It is also recommended to spend time in the moonlight on Guru Purnima. The “Soma Chandra”, or spiritual quality of the moon, is said to have a deeply auspicious and healing effect on this night.

What an expansive weekend! Over the course of 3 days, we gathered in the peaceful atmosphere of , immersing ourselves in profound Vedic wisdom, guided by the brilliant teachings of .

Together, we learned about the Vedic perspective on time and space, nourished ourselves with delicious Ayurvedic meals, and enjoyed the abundant nature surrounding the center.

My favorite part about these weekends is watching transformation unfold in real time. I feel so fortunate to be facilitating these retreats.

The Vedic Perspective on Decision-Making:

We tend to take decisions way too seriously. Usually because we’re afraid of getting it wrong or want to make the “perfect” choice. So we stall, get stuck, and feel stagnant.

We’ve all been at a dinner table when someone takes forever to order. It strains the environment and creates tension. The same thing happens in life when we are indecisive. Nature starts to scream: “Just choose something, anything!”

It’s actually better to make a decision and get real-life feedback than to stay frozen in overthinking. Decisions give us high-grade information based on experience. Overanalyzing before deciding gives us low-grade information based on speculation.

If we make the wrong choice, no problem, we can pivot, laugh it off, and try again. Forward movement is key. Action is always better than analysis paralysis.

When we have a practice like Vedic Meditation, our awareness refines, and we get better at following charm (the subtle pull of intuition guiding us toward evolution). Eventually, this mechanism becomes the ultimate decider. There is no more indecision because knowingness takes over.

Simple. Natural. Innocent.

Three qualities that hold deep wisdom and bring more flow and ease to life.

✨ Simple

To be clear, undistracted, and aligned. No need to complicate things.

Letting go of overthinking and overwhelm and embracing the next right step.

Less drama. More clarity.

🌿 Natural

Moving with our own rhythms and accepting the timing of things.

Letting go of rushing, controlling, and comparing. Allowing life to unfold without manipulating it.

No longer pretending to be anything we’re not, because we’ve come to enjoy our authentic selves.

🌼 Innocent

Showing up with curiosity instead of control.

Having more openness, reverence, and a willingness to be surprised.

Surrendering the need to know how things will turn out. Getting comfortable with the unknown.

This is our natural way of Being—pursuing desires from a softer, more genuine place. And when we need a reminder, we can return to these words to gently ease the moment.

Three Laws of Nature: Creation, Maintenance, and Destruction

As we move through life, we’re always cycling through these three phases, sometimes all at once. Understanding them helps us recognize the deeper mechanics at play in our lives.

Here’s a quote to keep in mind as we examine these phases:

“Embrace the unknown with enthusiasm. The unknown represents the field of all possibilities. It represents the field of progressive change itself. The ever-repeating known, that is that which we know already, represents the field of stagnation.” ~ Thom Knoles

✨Creation: New beginnings, fresh energy
• Example: Starting a new project, relationship, or job
• Feels like: That spark of something new calling you. Stepping into the unknown, where all possibilities live.
• Quote connection: Unknown = Possibility = Creation

🌿Maintenance: Nurturing what still serves
• Example: Taking care of things you’ve already created or that are still important
• Feels like: The steady, reliable energy of preserving what’s good. But staying here too long can lead to stagnation.
• Quote connection: Honor what’s working, but stay open to change.

🔥Destruction: Letting go to make space
• Example: Ending a relationship, quitting a bad habit, or leaving an old job
• Feels like: Might be uncomfortable at first, but ultimately leads to something more evolutionary.
• Quote connection: Let go = Space for new = Progress

Whatever phase you’re in, know it’s part of your evolution. Ride the wave. Welcome the change. Let it take you forward. 🌊

Thursday, March 20th, is the Spring Equinox, representing the beginning of a new season. The word equinox is Latin for “equal night,” symbolizing the balance of day and night at this time of year. 

Spring is a season of renewal, growth, and creation. Here are five ways to honor these themes:

🌷Set intentions: This is a powerful time to plant seeds for what you’d like to cultivate in the coming months.

🌷Host a spring potluck: Each guest can bring a dish with their favorite seasonal ingredients.

🌷Watch the sunrise & sunset: Tuning into the sun’s rhythms deepens our connection with nature.

🌷Clear space for new energy: Declutter what no longer serves you and refresh your space with colorful flowers, new art, or a spring-scented candle.

🌷Soak up the fresh air: Take a nature walk, read outside, or visit a local farmer’s market.

However you choose to celebrate—through ritual, gathering, or quiet moments in nature—may this season bring you growth and inspiration. 🌿
