Ingredients:
1 ¼ cups warm water
2 Teaspoons instant yeast
¼ Cup ORGANIC INDIA Whole Husk Psyllium
¾ Cup water
2 Tablespoons sugar or maple syrup, divided
3 ½ Cups Gluten-free Bread Flour
1 Teaspoon sea salt
¼ Teaspoon baking soda (for water bath), optional
Desired toppings (such as coarse salt, poppy seeds, sesame seeds)
Directions:
1. Combine 1¼ cups warm water, yeast, and 1 Tbsp maple syrup or sugar in a liquid measuring cup. Let sit while you prep the next step.
2. In a small dish, mix ¼ cup ORGANIC INDIA Whole Husk Psyllium with ¾ cup water. Whisk and let sit until thickened.
3. In a large bowl, combine flour, salt, psyllium gel, and yeast mixture. Mix until sticky and fairly smooth. Lightly knead to incorporate any unmixed flour. Cover and rest 30 minutes.
4. Divide dough into 8 pieces. Flatten each into a disc and poke a hole in the center. Place on a lined baking sheet. Cover and rest 30 minutes.
5. Preheat oven to 425°F. In a wide pot, simmer water with 1 Tbsp maple syrup and baking soda. Boil 3-4 bagels at a time, 1 min per side. Remove and add toppings if desired.
6. Place bagels in oven for 20–25 min until golden. Cool briefly before enjoying.
