I ditched my original dinner plans for something warm . It's cold and wet out making me want cozy comfort food .
I made cauliflower steaks on the side of zoodles(zucchini and summer squash) topped them with creamy roasted garlic sun-dried tomato butter beans .

Jack Fruit salad

Lettuce
Spinach
Cilantro
Cucumber
Tomatoes
Bell peppers (green,red, orange and yellow)
Poblano
Jack fruit season with lime juice, nutritional yeast,salt, garlic and paprika
Sprinkles of flow your heart vegan cheese

I was going to use a cashew cheese sauce instead but dropped and shattered the glass jar.

This has been a go to lately yummy and quick .

Vegan Eggless egg bites
40cal makes 12

One package tofu in a blender with a splash of almond milk, salt , pepper, garlic, tumeric, paprika,and nutritional yeast

Saute any veggies really I used what I had .
Red and green bell pepper, tomato, cilantro and broccoli

Add everything into a bowl ( mix in a vegan cheese optional) mix it up and then scoop the mixture into paper lined cupcake tray

Bake 30min @375
Cool for 10min .

Family's dinner.

We are not all plant based in this home so I have learned to cook meals that I only need to make two separate proteins instead of two completely separate meals .
Tonight they had sweet potatoes with ground turkey(for me tofu crumbles) ,red pepper, spinach,garlic ,pickled onions, pickled jalapenos and an avocado sauce .
