If you feel like you don’t have time for lunch, I’m challenging you to make this 10 minute Mediterranean stuffed pita πŸ₯™

All you need is:
mini cucumbers
tomatoes
red onion
feta
olive oil
lemon
hummus
+ pita
-
To make it:
Finely chop all of the veggies.
Add them to a bowl and mix with olive oil, squeeze of lemon, salt and pepper.
Add crumbled feta cheese and chickpeas (I air fried my chickpeas to make them crispy while I chopped the veggies, but totally optional!).
Spread hummus in pita bread and stuff the salad into the pita.

Broccoli Grape SaladπŸ₯¦πŸ‡ The way to eat broccoli. Also, the dressing is one of my favorites.

Ingredients (4 servings)
Salad:
2 large broccoli heads (florets only)
1 cup red grapes
0.25 cup salted almonds
0.5 red onion
0.25 cup dried cranberries

Dressing:
0.5 cup raw cashews
0.25 cup water
2 tbsp maple or agave syrup
2 tbsp lemon juice
2 garlic cloves
0.5 tsp salt and pepper
2 tbsp plant milk + more

Instructions:
1. Boil your cashews for 10 minutes.
2. Add the cashews and the rest of the ingredients listed under β€œdressing” to a blender or food processor. Blend until smooth and creamy. Add more plant milk until wanted consistency.
3. Finley chop up broccoli florets, red onion, almonds, and dried cranberries. Cut the grapes in half. Add all the ingredients to a big bowl.
4. Top with the dressing, and enjoy!οΏ½-

As I’m sure lots of you can relate, IBS has a close link with our mental health, including the link between IBS and depression. Poor mental health can lead to worsening of our symptoms, and our IBS symptoms can lead to worse mental health…it’s a vicious circle.
