Veggie Lasagna
This veggie lasagna meal was EVERYTHING!!! While I wasn’t able to completely plant based, it came out awesome.

This is packed with veggies: mushrooms, peppers, onions, and zucchini. I added some fiber with the black beans.

In order to save some time and not have to boil the noodles, I tried these oven ready noodles and they did not disappoint.

This was great and I plan to pair it with a kale salad 😋
