Spicy Watermelon Salad with Cilantro and Lime
Ingredients:
• 1 mini watermelon (or 1/4 of a regular watermelon), cut into wedges or bite-sized pieces
• 1/4 cup cilantro, chopped
• 1/2 jalapeño, thinly sliced (or chopped for less intense heat; adjust to taste)
• 3 tablespoons lime juice
• 2 tablespoons olive oil
• 2 teaspoons honey
• 1/2 teaspoon kosher salt
• Pinch of red chili flakes (optional)
• Flaky sea salt (for garnish)
• Extra red chili flakes (for garnish, optional)
Instructions:
1. Prepare the Watermelon:
• Cut the watermelon into handheld-sized wedges or bite-sized pieces.
2. Make the Dressing:
• In a small bowl, whisk together the lime juice, olive oil, honey, salt, and chili flakes (optional). Stir in the chopped cilantro and jalapeño.
3. Assemble the Salad:
• For wedges: Arrange the watermelon wedges on a large serving platter or individual plates. Spoon the dressing over the top and finish with flaky sea salt and an extra pinch of chili flakes if desired.
• For cubed watermelon: Add the cubed watermelon to a bowl, then pour the dressing over it. Gently toss to coat, then top with extra cilantro, jalapeño slices, flaky sea salt, and an extra pinch of chili flakes if desired.
4. Serve Immediately:
• Serve the salad right away to enjoy the fresh and vibrant flavors!
Tips:
• Adjust heat: For a spicier version, add more jalapeños or chili flakes. For less heat, adjust the amount of jalapeño or omit the chili flakes entirely.
• Vegan option: Substitute the honey with maple syrup for a vegan-friendly option.
• Storage: Best served fresh, but you can store leftovers in the refrigerator for up to 1 day.
