🌿 INGREDIENTS

Macaron Shells

1 cup almond flour

1¾ cups powdered sugar

3 large egg whites, room temp

¼ cup granulated sugar

Pinch of cream of tartar

Pink gel food coloring (optional)

Raspberry Filling

¾ cup raspberries (fresh or frozen)

2 tbsp sugar

1 tsp lemon juice

2 tsp cornstarch + 1 tbsp water

Toppings

2 tbsp crushed pistachios (roasted, unsalted)

✨The shells are light and crisp, yielding to a tangy, seed-speckled jam with a nutty crunch on top.

🔢 INSTRUCTIONS

Sift almond flour and powdered sugar into a bowl.

In another bowl, beat egg whites with cream of tartar until foamy.

Gradually add granulated sugar; beat to stiff glossy peaks.

Fold in dry mixture and pink coloring until batter ribbons slowly.

Pipe small circles on parchment, tap tray to release air.

Rest 30–45 mins until tops are dry to the touch.

Bake at 300°F (150°C) for 15–18 mins. Cool completely.

Cook raspberries, sugar, and lemon in a small pot. Add cornstarch slurry.

Simmer until thick like jam, then cool fully.

Pipe jam onto half the shells, sandwich, and top with crushed pistachios.
