Mediterranean Baked Cod

Ingredients:
2 cod fillets (6-8 oz each)
2 tablespoons olive oil
1 teaspoon smoked paprika
1 teaspoon garlic powder
Salt and black pepper, to taste
1 cup cherry tomatoes, halved
1/2 cup mixed olives (green and Kalamata)
2 garlic cloves, minced
1/4 cup vegetable or chicken broth
2 tablespoons fresh parsley, chopped
Fresh thyme sprigs (optional)
Directions:
1. Prepare the Oven and Baking Dish:
Preheat the oven to 375°F (190°C).
Lightly grease a baking dish with olive oil to prevent sticking.
2. Season the Cod:
Pat the cod fillets dry with a paper towel.
Season both sides of the fillets with smoked paprika, garlic powder, salt, and black pepper.
Place the seasoned fillets into the prepared baking dish.
3. Add the Vegetables and Aromatics:
Scatter the halved cherry tomatoes, mixed olives, and minced garlic around the fish.
Drizzle the remaining olive oil and pour the broth over the fish and vegetables.
If using, place fresh thyme sprigs on top for extra flavor.
4. Bake the Cod:
Transfer the dish to the preheated oven.
Bake for 18-20 minutes, or until the cod is flaky and cooked through. The fish should easily flake apart with a fork.
5. Garnish and Serve:
Remove from the oven and sprinkle the chopped fresh parsley over the top.
Serve immediately with crusty bread, rice, or your favorite side dish.
Enjoy this light and flavorful Mediterranean-inspired baked cod!
