Cucumbers...some of the garden blessings!! Easy to grow, great cooling food... do you know all the beauty a cucumber brings....

Cucumbers are more than just a crunchy water stick they're actually little hydration powerhouses with some surprising benefits, and the skin plays a big role in that!

Benefits of cucumber (flesh & skin together)

Hydration: cucumbers are about 95% water, which helps replenish body fluids and supports skin, joint, and organ function!

Cooling and anti-inflammatory: compounds like cucurbitacin's and flavonoids aid in reducing swelling, puffiness, and irritation (hence thee spa-eye traditions).

Digestive Support: The fiber in cucumbers, especially in the skin, aids healthy bowel movements and supports gut health.

Antioxidants: they contain vitamin C, beta-carotene, and flavonoids that help protect cells from oxidative stress.

Minerals: Provide small amounts of potassium, magnesium, and silica-silica is great for connective tissue, hair, skin, and nails.

Purpose of the skin:

Protective barrier: In nature, the skin shields the cucumbers inner flesh from damage, dehydration, pests, and microbes.

Nutrient concentration;

The skin holds most of the cucumbers insoluble fiber and higher concentration of antioxidants (especially Vitamin K) compared to the flesh.

Biter Compounds;

The slightly bitter taste in some of the cucumber skins comes from cucurbitacin's, which deter pests and fungi in the wild. These compounds also have mild anti-inflammatory and antimicrobial effects in humans.

Color and photosynthesis

The green skin contains chlorophyll, which helps the cucumber plant photosynthesize while growing.

Hydration from inside out! High water contents help keep blood volume, skin moisture and joint lubrication in balance.

Gentle Detox Water + fiber combination helps flush waste through the kidneys and digestive tract.

Skin and connective tissue - silica in cucumber supposts collagen formation which benefits skin elasticity, hair, nails, and join cartilage.

Anti-inflammatory - the skins cucurbitacin and flavonoids can help reduce low-level inflammation.

Digestive regulation Insoluble fiber in the skin keeps bowel movements regular and supports gut microbiome balance.

Blood sugar moderation - the fiber helps slow down sugar absorption from other foods, keeping blood sugar steadier.

Bone health - Vitamin K in the skin supports calcium regulation and bone strength.

Weight Management - Very low calorie, but still filling because of water fiber combo.

For optimal nutrition; only slice right prior to eating for optimal Vit C absorption (cutting speeds loss rate due to oxygen exposure)

Avoid long soaking the nutrients will get lost in water.

Eat raw when possible; C and some antioxidants degrade with heat, so raw cucumber salads, fresh slices, or cold soups keep most nutrients.

Pair with healthy fats like avocado/ oil oil, wild caught salmon, organic raw nuts - it helps the absorption of fat soluble vitamin K and carotenoids in the skin.

Try a fresh cucumber salad; cucumbers, red onions, olive oil, apple cider vinegar or lemon juice, fresh dill or mint chopped, sea salt and cracked pepper....refreshing for the summer!
