Honey-Garlic Chicken with Carrots & Broccoli

Ingredients:

* Chicken thighs or breast
* Honey
* Soy sauce (low-sodium)
* Garlic
* Carrots
* Broccoli

Instructions:

* In a bowl, mix honey, soy sauce, and minced garlic.
* Marinate chicken in the mixture for at least 30 minutes.
* Place chicken, carrots, and broccoli on a baking sheet lined with foil.
* Bake until chicken is cooked through and vegetables are tender.

Roasted Root Veggies & Greens over Spiced Lentils

Ingredients:

* Lentils
* Mixed root vegetables (carrots, beet, sweet potatoes, parsnips)
* Olive oil
* Cumin, paprika, salt, and pepper
* Mixed greens

Instructions:

* Cook lentils according to package instructions and season with cumin, paprika, salt, and pepper.
* Toss root vegetables with olive oil and roast until tender.
* Serve the lentils over mixed greens and top with the roasted root vegetables.

Garlic-Lime Pork with Farro & Spinach

Ingredients:

* Pork chops
* Farro
* Baby spinach
* Garlic
* Lime juice
* Low-sodium soy sauce

Instructions:

* In a skillet, cook the pork chops with garlic, lime juice, and soy sauce until browned and cooked through.
* Cook farro according to package instructions and mix with baby spinach.
* Serve the pork chops over the farro and spinach mixture.

Feta & Roasted Red Pepper Stuffed Chicken Breast

Ingredients:

* Chicken breast
* Feta cheese
* Roasted red peppers
* Spinach
* Herbs and spices (oregano, garlic powder, salt, pepper)

Instructions:

* Preheat the oven to 375°F (190°C).
* Cut a pocket into each chicken breast.
* Stuff the pocket with feta cheese, roasted red peppers, and spinach.
* Season the chicken with herbs and spices.
* Brown the chicken in a skillet, then transfer to the oven and bake until cooked through.

* Ingredients:

Canned tuna, white beans, red onion, lemon juice, cilantro, salt, and olive oil.

Sprinkle chopped cilantro, and add salt as desired.

Whisk lemon juice, and olive oil for the dressing.

Cooked shrimp, avocado, mixed salad greens, corn kernels, cilantro, cucumber, red onions, tomatoes, lime juice, salt, and olive oil.

* Instructions:

Peel and devein cooked shrimp.

Dice avocado, tomatoes, and cucumber.

Combine cooked shrimp, avocado, mixed salad greens, corn kernels, chopped cilantro, and red onions.

Add salt as desired.

Drizzle with lime juice and olive oil. Enjoy!

Drizzle with balsamic vinaigrette dressing.

* Ingredients:

Roasted beets, baby spinach, goat cheese, walnuts, balsamic vinegar, olive oil, honey.

* Instructions:

Slice-roasted beets.

Wash and dry baby spinach.

Crumble the goat cheese.

In a small bowl, whisk balsamic vinegar, olive oil, and honey.

Combine sliced beets, baby spinach, crumbled goat cheese, and chopped walnuts.

Drizzle the dressing over the salad.

Grilled chicken breast, mixed salad greens, chopped purple cabbage, mandarin oranges, sliced almonds, sliced green onions, crispy chow mein noodles, sesame ginger dressing.

* Instructions:

Chop grilled chicken breast.

Combine mixed salad greens and chopped purple cabbage, drained mandarin oranges, sliced almonds, sliced green onions, and crispy chow mein noodles in a bowl.

Add chopped chicken.

Drizzle sesame ginger dressing over the salad.

Thai Beef Salad:

* Ingredients:

Grilled beef steak, mixed salad greens, cucumber, cherry tomatoes, red onion, fresh mint leaves, fresh cilantro, lime juice, peanuts, fish sauce, and brown sugar.

* Instructions:

Slice grilled beef steak.

Combine mixed salad greens, sliced cucumber, halved cherry tomatoes, thinly sliced red onion, torn mint leaves, and chopped cilantro.

In a small bowl, whisk lime juice, fish sauce, and brown sugar.

Sprinkle some peanuts on top and drizzle the dressing over the salad and toss gently.
