Honey-Garlic Chicken with Carrots & Broccoli

Ingredients:

* Chicken thighs or breast
* Honey
* Soy sauce (low-sodium)
* Garlic
* Carrots
* Broccoli

Instructions:

* In a bowl, mix honey, soy sauce, and minced garlic.
* Marinate chicken in the mixture for at least 30 minutes.
* Place chicken, carrots, and broccoli on a baking sheet lined with foil.
* Bake until chicken is cooked through and vegetables are tender.

Roasted Root Veggies & Greens over Spiced Lentils

Ingredients:

* Lentils
* Mixed root vegetables (carrots, beet, sweet potatoes, parsnips)
* Olive oil
* Cumin, paprika, salt, and pepper
* Mixed greens

Instructions:

* Cook lentils according to package instructions and season with cumin, paprika, salt, and pepper.
* Toss root vegetables with olive oil and roast until tender.
* Serve the lentils over mixed greens and top with the roasted root vegetables.

Garlic-Lime Pork with Farro & Spinach

Ingredients:

* Pork chops
* Farro
* Baby spinach
* Garlic
* Lime juice
* Low-sodium soy sauce

Instructions:

* In a skillet, cook the pork chops with garlic, lime juice, and soy sauce until browned and cooked through.
* Cook farro according to package instructions and mix with baby spinach.
* Serve the pork chops over the farro and spinach mixture.

Feta & Roasted Red Pepper Stuffed Chicken Breast

Ingredients:

* Chicken breast
* Feta cheese
* Roasted red peppers
* Spinach
* Herbs and spices (oregano, garlic powder, salt, pepper)

Instructions:

* Preheat the oven to 375°F (190°C).
* Cut a pocket into each chicken breast.
* Stuff the pocket with feta cheese, roasted red peppers, and spinach.
* Season the chicken with herbs and spices.
* Brown the chicken in a skillet, then transfer to the oven and bake until cooked through.

Tuna and White Bean Salad:

* Ingredients:

Canned tuna, white beans, red onion, lemon juice, cilantro, salt, and olive oil.

* Instructions:

Drain canned tuna and rinse white beans.

Combine tuna, white beans, and, thinly sliced red onion.

Sprinkle chopped cilantro, and add salt as desired.

Whisk lemon juice, and olive oil for the dressing.
