Ingredients:

Roasted Root Veggies & Greens over Spiced Lentils

Ingredients:

* Lentils
* Mixed root vegetables (carrots, beet, sweet potatoes, parsnips)
* Olive oil
* Cumin, paprika, salt, and pepper
* Mixed greens

Instructions:

* Cook lentils according to package instructions and season with cumin, paprika, salt, and pepper.

Feta & Roasted Red Pepper Stuffed Chicken Breast

Ingredients:

* Chicken breast
* Feta cheese
* Roasted red peppers
* Spinach
* Herbs and spices (oregano, garlic powder, salt, pepper)

Instructions:

* Preheat the oven to 375°F (190°C).
* Cut a pocket into each chicken breast.

Tuna and White Bean Salad:

Canned tuna, white beans, red onion, lemon juice, cilantro, salt, and olive oil.

Drain canned tuna and rinse white beans.

Combine tuna, white beans, and, thinly sliced red onion.

Sprinkle chopped cilantro, and add salt as desired.

Whisk lemon juice, and olive oil for the dressing.
