Strawberry Crunch Cheesecake Bites

FULL RECIPE:
Ingredients:
For Crust:
1 1/2 cups vanilla wafer crumbs
4 tbsp melted unsalted butter
1 tbsp granulated sugar
For Cheesecake Filling:
16 oz (450 g) cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/4 cup sour cream
1/4 cup strawberry puree
For Strawberry Center:
1/2 cup strawberry jam or preserves
For Crunch Coating:
2 cups strawberry wafer cookies, finely crushed
1/2 cup freeze-dried strawberries, crushed to powder
1/4 cup graham cracker crumbs
12 oz white chocolate, melted
Instructions:
Make Crust:
Preheat oven to 325°F. Line muffin tin with paper liners.
Mix vanilla wafer crumbs, melted butter, and sugar.
Press 1 tablespoon into bottom of each liner.
Bake 5 minutes. Cool.
Make Filling:
Beat cream cheese and sugar until smooth and fluffy.
Add eggs one at a time, mixing well after each.
Mix in vanilla, sour cream, and strawberry puree.
Pour filling over crusts, filling 3/4 full.
Add 1/2 tsp strawberry jam to center of each.
Use toothpick to swirl slightly.
Bake:
Bake 18-20 minutes until edges set but centers slightly jiggly.
Cool completely in pan.
Refrigerate 4 hours or overnight.
Coat:
Mix crushed strawberry wafers, freeze-dried strawberry powder, and graham crumbs.
Remove cheesecake bites from liners.
Melt white chocolate with 1 tbsp coconut oil.
Dip each cheesecake bite in white chocolate, coating completely.
Immediately roll in strawberry crunch coating.
Place on parchment paper to set.
Refrigerate until serving.
Makes 12 bites | Prep: 30 min | Bake: 20 min | Chill: 4+ hours
