Tracey Eakin: Plant-Based Nutrition Counselor Tracey Eakin I am a Plant-Based Nutrition Counselor, Board Certified by the American Association of Drugless Practitioners.

I help people to achieve their wellness goals by providing them with the tools that they need to gain control over their health. I had been a vegetarian for 20 years when 5 years ago I adopted an entirely plant-based lifestyle. Since that time, I have lost over 50 pounds and have kept it off and resolved an autoimmune condition known as idiopathic thrombocytopenic purpura or ITP. My body was attacking and destroying my platelets. I could have faced the removal of my spleen or platelet transfusions. A low-fat, plant-based lifestyle changed everything for me. So after obtaining my MBA from Duquesne University and working in the corporate finance world for 13 years, I decided to change careers. I completed the only collegiate program in the country focused on the medical benefits of a plant-based lifestyle from Cornell University and am certified by John McDougall, MD to teach his low-fat, plant-based program The Starch Solution. I am raising two children on a nearly 100% plant-based lifestyle and they are thriving. There was no time to cook tonight so I threw some low-fat frozen french fries into the oven while I mixed some steamed lentils from Trader Joe's with my favorite bbq sauce, then added a vegetable. The only reason my plate wasn't heaped with more carrots is that I had already had so many veggies earlier in the day. If the bbq sauce is too strongly flavored for your tastes, you can mix the lentils with sloppy joe sauce instead.

Legumes (beans, peas, and lentils) are so good for us that we should be trying to incorporate them into every meal we eat!

Heart disease is our #1 killer. Did you know that you could be an obese, diabetic, smoking couch potato & still not develop atherosclerosis, as long as the cholesterol level in your blood is low enough? Who in the world would make such a claim??? William C. Roberts, MD. He is the head of Baylors Cardiovascular Institute, he has been the Editor-in-Chief of the American Journal of Cardiology for the past 32 years, he has authored 1,397 scientific publications, & has written more than 12 textbooks on cardiology. He is probably the most renowned cardiovascular pathologist in the world. Dr. Roberts recommends a total cholesterol of < 150 mg/dl and an LDL cholesterol of < 60 mg/dl. That could be accomplished by eliminating animal products & minimizing fats, including added vegetable fats, from your diet. Here is Dr. Roberts' editorial:

I was in a breakfast rut and I love savory dishes, so I tried this recipe. I added plenty of smoked paprika and red pepper flakes and enjoyed the diversion from my regular routine. Give it a try!

If you are an insulin-dependent type II diabetic, please make sure that you work closely with your doctor while adopting a plant-based lifestyle as you can regain your insulin sensitivity in as little as a week and you will want your doctor to closely monitor your need for your insulin medication and reduce/eliminate as appropriate.

In its 2017 Standards of Medical Care in Diabetes, the American Diabetes Association maintains that a plant-based eating pattern is an effective option for type 2 diabetes management and encourages clinicians to always include education on lifestyle management.
