This roasted mushroom toast is one of our favorite grounding, nourishing staples—especially in the colder months.

In Ayurveda, mushrooms are valued for their earthy, stabilizing qualities, making them especially supportive for balancing Vata during fall and winter. Roasting them with warming olive oil, garlic, thyme, and tamari enhances digestion, supports agni (digestive fire), and creates a deeply satisfying, savory flavor.

Serve these mushrooms over scrambled eggs or hummus toast for a simple, protein-rich meal that nourishes the nervous system and keeps you feeling rooted and sustained.

Ingredients:
1.25 pounds mushrooms
4 sprigs fresh thyme
3 cloves garlic
2Tbs olive oil
1/2 tsp salt
1/4 tsp pepper
1/2 Tbs Tamari

Instructions:
Toss sliced mushrooms with all of the above ingredients. Bake on a sheet tray at 350 degrees in the oven for 10 minutes, stir and bake for an additional 5-10 minutes until cooked tender and deeply flavorful. Serve immediately over eggs or hummus toast or cool until desired use.

Want to take it a step further?
Add avocado or tahini for healthy fats, sauerkraut or pickled onions for digestive support, or a soft herb like parsley to bring lightness and balance.
