You all have to try Anna's Creamy Miso & Bean Soup recipe! The whole office drools every time she brings it in for lunch! ๐คค
It's GF and DF. We've got you ๐
Ingredients:
Olive oil
1 onion, peeled and sliced
2 cans cannelloni beans
1 can full fat coconut milk
3-4 tbsp white miso paste
Salt and pepper
Dino kale de-stemmed and chopped
1 bunch of dill
1-2 medium lemons, juiced
1 carton stock of choice (veggie or chicken)
Instructions:
1) Saute the onion with a splash of olive oil in a large pan until the onion turns translucent.
2) Add beans and juices from the cans into the pan. Turn up heat and cook for 7-10 minutes until liquid has reduced.
3)Add all of the cream at the top of the can to the pan. Stir in miso and some pepper.
4)Once thatโs mixed, add in a quart of chicken or veggie stock.
5) Once the soup is hot again, stir in the kale and cook until it has wilted.
5)Add chopped dill and lemon juice.
6) Season with salt and pepper as desired.
7) Optional toppings: dill, olive oil, coconut cream, pepper, toasted bread
