It’s fall season so you know what that means! Healthy fall dishes and desserts, and we are starting off strong with this delicious, rich Pumpkin bread!
Pumpkin Protein Bread
Ingredients:
1 ¼ cups oat flour (scoop and level, don’t pack)
1 cup pumpkin puree
¾ cup Greek yogurt
2 large eggs
½ cup vanilla protein powder
½ tsp pumpkin pie spice
1 tsp cinnamon
1 tsp baking powder
1 tsp baking soda
½ cup dark chocolate chips
Instructions:
Preheat oven to 350°F. Line a loaf pan with parchment paper and lightly spray with cooking spray.
In a large bowl, mix together the oat flour, pumpkin, Greek yogurt, eggs, protein powder, pumpkin pie spice, cinnamon, baking powder, and baking soda until smooth.
Fold in most of the chocolate chips, saving a few for the top.
Pour batter into the pan and sprinkle remaining chocolate chips on top.
Bake for 35–45 minutes, or until a toothpick inserted in the center comes out clean.
Cool, slice, and enjoy this healthy alternative sweet treat!
