Looking for a new holiday dessert recipe?? Some of our family's favorites are nut butter recipes - one that has dairy and one that is dairy free! ENJOY!🤩
Chocolate Nut Butter Refrigerator Fudge (Dairy Free)
Makes 16 squares
Ingredients
• ½ cup coconut oil
• ½ cup smooth peanut butter (or nut butter of choice)
• ¼ cup cocoa powder (Hershey’s Special Dark 100% cacao)
• ½ cup powdered allulose
• ¼ tsp salt
• 1 ½ tsp vanilla
Directions:
1. In a microwave safe bowl (or pyrex 2 cup glass measuring cup will work), melt coconut oil with peanut butter in the microwave (30 sec at 50% power, stir and repeat till melted) or in a double boiler on the stove top.
2. Whisk in remaining ingredients.
3. Line pans with parchment paper. Pour into 2 mini-loaf pans or 1 regular-sized loaf pan.
4. Freeze 30 minutes or refrigerate for 2 hours then cut into pieces. Separate and keep stored in the freezer or fridge.
Macros (per piece = ⅛ mini-loaf) ≈ Protein 2 g | Net carbs 1 g | Fat 10 g (per piece)
