🥘 Cozy Hamburger & Vegetable Soup (Stovetop or Crockpot)
Warm, simple, and easy to reheat – this is a great “big pot” meal for clients and caregivers as it gets colder.
🧾 Ingredients:
1 lb ground beef (or turkey)
1 small onion, diced
3–4 carrots, sliced
2–3 potatoes, diced (peel if desired)
2 stalks celery, sliced
1 can (14.5 oz) diced tomatoes
1 can (8 oz) tomato sauce
4 cups beef broth (or chicken broth)
1 cup frozen mixed vegetables (peas, corn, beans)
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt & pepper to taste
👩🍳 Stovetop Directions:
1️⃣ In a large pot, brown the ground beef with the diced onion. Drain any extra fat.
2️⃣ Add carrots, potatoes, celery, diced tomatoes, tomato sauce, and broth.
3️⃣ Stir in garlic powder, Italian seasoning, salt, and pepper.
4️⃣ Bring to a boil, then reduce heat and simmer for 25–30 minutes, until veggies are tender.
5️⃣ Add frozen mixed vegetables and cook another 5–10 minutes.
6️⃣ Taste and adjust seasoning if needed. Serve warm with crackers or bread.
🫕 Crockpot Directions:
1️⃣ Brown ground beef with onion on the stove, drain fat.
2️⃣ Add cooked beef, all veggies, tomatoes, tomato sauce, broth, and seasonings to the crockpot.
3️⃣ Cook on Low 6–8 hours or High 3–4 hours, until veggies are tender.
💙 Caregiver Tip:
This soup is easy to portion into containers for a few days’ worth of lunches or dinners. It also works well for clients who need soft, easy-to-chew foods – just cook until everything is very tender.
