At the height of my illness I was going to the doctor a couple times a week, taking way too many medications, and was perfecting my Juicy Lucy (gobs of cheddar cheese stuffed inside a hamburger). I'm lucky to have met Greg Shim who taught me about inflammation and how to manage it through diet. Reluctantly I cut out gluten (2 yrs ago) and even more reluctantly cut out dairy (1 yr ago). The inflammation in my body decreased, medications decreased, my weight decreased, and my doctors appointments stopped. I don't feel perfect by any means, but my health has made a huge turn around. I still have bad days and weeks, but not like I used too. I'm still making steps forward and I'm pretty sure that some day I'll feel completely well again. — with Jared Kaber.
