While making breakfast this morning, I quadrupled the recipe and now breakfast is ready for Monday-Wednesday! Loving this simple cacao mousse lately. To make one serving, combine 6oz unsweetened nut milk + 1T cacao + 2T almond butter (or nut butter of choice) + 2 scoops gelatin in blender. Blend on medium speed 20-30 seconds. Pour into glass jar, refrigerate, and allow to set (at least 30 minutes). Sprinkle with ground flax, cinnamon, nutmeg, and/or desired toppings.

Mahi Mahi with Spicy Avocado Sauce (4 servings)
4 - 4oz mahi mahi portions
1 Tbsp avocado oil
Salt and pepper

Spicy Avocado Sauce
1 small avocado
1 1/2 Tbsp pure lemon juice
1/2 cup filtered water
1/2 cup green chile salsa

Heat large skillet over medium high heat, add avocado oil; allow oil to heat up before adding fish. Place fish in skillet, arranging portions side by side; sprinkle with salt and pepper. Cook 4-5 minutes, flip, and cook another 4-5 minutes or until fish flakes with a fork and is no longer translucent inside. While fish is cooking, combine sauce ingredients in blender and process until mixed well, but still chunky. To serve, top with Spicy Avocado Sauce.

Bacon Citrus Chicken (4 servings)
1 lb of chicken, cut into four sections
1/2 tsp salt
1 tbsp fresh ground mulling spices
1/2 cup pinot noir wine
4 small satsumas, peeled
4 slices nitrate- and nitrite-free bacon, halved

Preheat oven to 450 degrees. Place chicken in large baking dish. Cover all sides of chicken with salt and mulling spices (if you don't have an empty grinder, use a meat tenderizer to crush mulling spices into a fine powder). Combine wine and three satsumas in blender; mix until smooth consistency is achieved. Pour mixture over chicken. Top each piece of chicken with 2-3 segments of the remaining satsuma, layer with bacon. Bake for 45 minutes or until chicken in no longer pink inside. Pour remaining juices over chicken when serving.

YUM!!!

Rendition on my ...thumbprints. In order to make them and I whipped up some walnut (see recipe in previous post) then rolled that into balls and filled the thumbprint with blueberry preserves. Staying with my parents, who love their sweets (not the kind), and they found them delicious!

Three Ingredient Pancakes - a delicious recipe for Sunday breakfast ;)

Looking for a new recipe to test out this weekend? Give these a try... Three Ingredient Pancakes (2 servings)
3 eggs
1 medium banana
½-1 tsp organic unrefined coconut oil
Topping(s) of choice - canned coconut cream, cinnamon, chopped walnuts, cinnamon, etc.

Combine ingredients in blender until smooth consistency is achieved. Heat skillet over medium heat; once warmed, add coconut oil. Pour ¼ cup of batter into the center of the pan and cook just like you would pancakes.

these apple crepes turned out even better than I had imagined! Crepe = 2 eggs + 1 egg white + 1Tbsp water + pinch of cinnamon - divide in two, cooking one thin crepe at a time. Filling = apples sliced and sautéed in coconut oil (toss with a dash of cinnamon and tish of vanilla extract before cooking). Top with leftover apples and chopped and toasted walnuts.
