🍫 High-Protein Double Chocolate Chip Muffins

Ingredients:

* 1 cup cottage cheese (blended smooth)
* 2 eggs
* 1/3 cup maple syrup (or honey)
* 1/4 cup melted butter or ghee
* 1 tsp vanilla
* 3/4 cup flour (or half flour + half almond flour for extra protein)
* 1/3 cup unsweetened cocoa powder
* 1/2 tsp baking soda
* 1/2 tsp baking powder
* Pinch of salt
* 1/2 cup chocolate chips

Instructions:

1. Preheat oven to 350°F. Line muffin tin.
2. Blend cottage cheese until smooth (this is key for texture).
3. Mix wet ingredients together.
4. In another bowl, mix dry ingredients.
5. Combine wet + dry (don’t overmix).
6. Fold in chocolate chips.
7. Bake 18–22 minutes until set.

*Add a scoop of protein powder. Adjusted the recipe to only a 1/2 cup of flour and 1/4 cup of maple syrup. 10 to 14 g of protein per muffin. Enjoy☺️

Often times when coaching patients we see a similar pattern…

Someone decides they’re ready for change.
They feel motivated. Ambitious. All in. 💪

Chicken and Fresh Produce Salad 🥗

Protein:
- 1-2 chicken breast (I used 1lb of shrimp)
- garlic powder
- salt and pepper

Produce:
- 1 whole cucumber, chopped
- 5 mini carrots, chopped
- 1/2 cup green onion, chopped
- 1 avocado, diced
- 1/4 cup cilantro, chopped
- 1/2 cup cooked edamame
- a few thin slices of red onion

Creamy Sweet and Spicy Sauce:
- 3/4 cup Greek yogurt
- 1 tbsp of mayonnaise
- sriracha (to taste)
- 1 tbsp of honey
- Juice 1 whole lime
- garlic powder
- salt + peppper
- water (if needed to thin)
