Who's ready for Summer flavors on the grill ☀️🍑🌽
Grilled chicken, sweet peaches, charred corn, fresh greens, basil, cilantro, and a zesty honey lime dressing = the perfect fresh summer meal.
Grilled Chicken, Peach & Corn Salad
Ingredients:
1 lb chicken breasts
1/3 cup extra virgin olive oil
1 tablespoon honey
1/3 cup fresh lime juice
1/4 cup chopped fresh cilantro, plus 2 tbsp cilantro leaves for salad
2 cloves garlic, crushed or grated
4 peaches, pitted and quartered (slightly firm peaches work best)
4 ears corn
5 oz mixed greens, spinach, and/or arugula
2 tablespoons torn fresh basil leaves
Salt & pepper, to taste
Instructions:
In a bowl or jar, combine the olive oil, honey, lime juice, cilantro, and garlic. Season with salt and pepper, then stir or shake well. Reserve 1/3 cup of the dressing for the salad.
Pour the remaining dressing over the chicken breasts in a large bowl or zip-top bag. Toss to coat and marinate for up to 30 minutes.
Heat the grill to medium-high heat.
Remove the chicken from the marinade and pat dry with paper towels. Brush the corn and cut sides of the peaches lightly with olive oil.
Place the chicken, corn, and peaches on the grill. Close the lid and cook for 5–6 minutes, until the peaches are lightly charred and the chicken releases easily from the grill grates.
Remove the peaches and flip the chicken and corn. Continue cooking another 5–6 minutes. Remove the corn when tender and continue cooking chicken as needed until it reaches 165°F internally.
Let the corn and peaches cool slightly. Cut the corn from the cob and dice the peaches.
In a large salad bowl, combine the greens, corn, peaches, basil, and remaining cilantro. Drizzle with the reserved dressing and toss gently.
Slice or serve the grilled chicken over the salad and enjoy!
