Located in Northeast Cedar Rapids, the Rockwell Collins Recreation Center is a 60,000 square foot corporate fitness facility conveniently located on the Rockwell Collins Campus. It is open to members seven days a week with extensive weekday hours to accommodate all work shifts and schedules. The Recreation Center opened in 1986, and in 1996, the Iowa Governor's Council on Physical Fitness and Sports recognized the Rockwell Employees Recreation Center as the best corporate program of the year. Beginning Monday, September 8, maintenance work will be performed in the menโ€™s locker room showers. During this time, two to three showers will be unavailable at once, which will temporarily reduce overall availability.

As part of this project, new ceiling fans will also be installed to help keep the space cooler and reduce humidity.

Please note: Electricity in BOTH the menโ€™s and womenโ€™s locker rooms will be shut off briefly starting at 6:00 PM on Monday, September 8.

Members are encouraged to plan accordingly. The project is expected to be completed within one week.

Thank you for your patience and understanding as we continue to maintain and improve our facility.

Give this ground turkey fajita bowl recipe a try!

Ingredients:
1ยฝ tablespoons extra-virgin olive oil, divided

1 large white onion, sliced (about 3 cups)

2 medium red bell peppers, sliced (about 2ยผ cups)

1 cup corn kernels, fresh or thawed

1ยฝ teaspoons chili powder, divided

1ยฝ teaspoons dried oregano, divided

ยพ teaspoon salt, divided

1 pound lean ground turkey

1 cup pico de gallo

ยฝ cup water

1ยฝ teaspoons garlic powder

1 teaspoon ground cumin

ยฝ cup reduced-fat sour cream

2 tablespoons chopped fresh cilantro, plus more for garnish

1 tablespoon lime juice

2 cups hot cooked brown rice

1 large avocado, quartered

1 small jalapeรฑo pepper, thinly sliced (4 tablespoons)

Directions
1) Heat 1ยฝ teaspoons oil in a large skillet over medium heat. Add sliced onion; cook, stirring occasionally, until translucent, about 3 minutes. Add sliced bell peppers and 1 cup corn; cook, stirring occasionally, until the peppers are crisp-tender, about 5 minutes. Stir in ยฝ teaspoon each chili powder and oregano and ยผ teaspoon salt; cook, stirring constantly, until the spices are fragrant, about 30 seconds. Transfer to a large plate. Wipe the skillet clean.

Heat the remaining 1 tablespoon oil in the skillet over medium heat. Add 1 pound ground turkey; cook, stirring often, until no longer pink on the outside, about 3 minutes. Stir in 1 cup pico de gallo, ยฝ cup water, 1ยฝ teaspoons garlic powder, 1 teaspoon cumin and the remaining 1 teaspoon each chili powder and oregano and ยฝ teaspoon salt. Continue to cook, stirring occasionally, until the liquid is nearly absorbed, 6 to 8 minutes. Remove from heat.

Whisk ยฝ cup sour cream, 2 tablespoons cilantro and 1 tablespoon lime juice together in a small bowl until combined. Divide 2 cups rice among 4 bowls; top evenly with turkey mixture, bell pepper mixture, quartered avocado and sliced jalapeรฑos. Dollop each bowl with 2 tablespoons sour cream mixture. Garnish with cilantro, if desired.
