🎃My annual Halloween attempt to create the perfect pumpkin muffin is a success & kid approved!!
Recipe:
🎃1 cup quick oats
🎃1/3 cup wheat bran
🎃1 egg
🎃15 oz pumpkin purée
🎃5 oz of Greek yogurt
🎃1 tsp pumpkin pie spice
🎃1 tsp vanilla extract
🎃1 pinch salt
🎃1 tsp baking powder
🎃1/3 cup sweetener (can substitute for sugar or any other sweetener) 🎃Add 1/3 cup chocolate chips or nuts (optional)
Bake at 400 degrees for 20 minutes⏱
Enjoy as a snack or part of your breakfast!🎃🧡

🌈⭐️TGIF! Here are my Friday Favorites for you. Some of my favorite things that help elevate the enjoyment of eating nutritious foods…Spaghetti squash stuffed with ground turkey, tzatziki, Baba Ghanoush-low calorie dips I use to make salad dressing (mix with balsamic vinegar), dip veggies or to add to protein like grilled salmon. My favorite chocolates that are perfectly portioned (2 = 60 calories) and lastly some spices that are my go to . Happy Friday! 🌈⭐️

👋 Hi! it’s been a while since I posted, but I was inspired when I was 🛒 shopping in today. By Thursday I’m so done cooking & want something quick & easy. Using their frozen 🍤, frozen 🥦& brown 🍚 I put together a delicious, healthy 🥘 meal. No, my kids did not eat this but my husband & I enjoyed it. This is a one of the staple meals I encourage my clients to eat. If you like extra heat, try Truff on this or almost anything😉.

⭐️Love tasting new products so I can recommend them to my clients. My breakfast 🥣this morning was cereal (my daughter picked the cinnamon flavor) 🛒which is gluten free & made with chickpea & pea protein rather than soy protein. Shown is 2/3 cup cereal with some yogurt (I love lite and fit, too) & a few🍓strawberries. This yogurt parfait 🥄was so enjoyable & I loved the taste & crunchy texture the cereal added. 🥞 Recreated an old favorite this morning: Oatmeal pancakes. I mixed a packet of lower sugar instant oatmeal with 1/4 cup egg 🥚 whites and a teaspoon baking powder. Blended that & made a delicious, sweet pancake and topped it with berries🍓& sugar free syrup. I used flavored oatmeal (sweetened with monk fruit)but if you have plain try adding a little baked apple, cinnamon, .official powdered peanut butter or chocolate chips to mix it up. The act of chewing & having your body have to “work” to break down the food helps provide a fullness & satisfaction that drinking liquids can’t. The smoothie🥄bowl however, is more like a chilled, thickened, blended flavor explosion 💥 that can be quite satisfying especially in this Summer🔥heat. My breakfast 🧇 today. I make this giant high fiber waffle using recipe of 1/2 cup fine wheat bran, 1/4 c egg 🥚 whites, 1/4 c almond milk. Add teaspoon of baking powder, pinch of salt. I add some vanilla extract & cinnamon too. I top the waffle with vanilla yogurt, berries 🍓& EBTB. The combo of sweet + salty is so good. Can be topped with eggs too to make more savory, make grilled cheese, PB &J etc. I enjoyed this with my blended iced coffee for breakfast today. 🧇
