This weekend, our MUSC APRN and PA team raised 1200$ for the American Heart Association! So proud of this group ….a beautiful walk this weekend for a great cause with my everyday heroes.

They look so humble but one of them does your nuclear cardiac stress testing, two of them could revive you in the ICU, one of them handles some of the toughest adolescent child cases in the state, and one not pictured takes care of children in neurosurgery with brain tumors and other rare diseases.

Here’s to a leadership team that just doesn’t quit.

Hydration

One of my favorite flavors of sparkling water 💧 that I’m enjoying this summer is the limoncello by . Look for the brands without added sugar.

We could pretend to be drinking the real limoncello from Italy 🇮🇹 but during this summer heat, this is the better choice.

Great hydration keeps you from feeling sluggish, dizzy, and dry. Water helps with digestion, nutrient absorption, and removes waste…. But how much do we really need?

Most people need to drink about 1/2 of their body weight in ounces, and more if working out. To replenish naturally after a great workout, choose coconut water over sports drinks.

Chef Louise brought us to Sardinia this evening teaching us how to bake gluten free baguettes 🥖 and pizza crust for which she spent time learning this Spring from an Italian lady.

Gluten is a known hormone disruptor and is one of the keys 🔑 to healing the body (especially think autoimmune, libido, fertility). Eliminating gluten can balance blood sugars which can ward against developing or worsening a chronic disease.

Details about the food:

Pizza with a twist- sauce at the base, cooked quinoa, and then veggies galore with a light dressing on top.

The beautiful baguettes were the show stopper!

Cooking like this is why Sardinia boasts as one of few 5 Blue Zones in the world-where an unusual higher number of people live longer.

Another night in the kitchen with and guest Lebanese chef

Every year nutrition experts review the healthiest diets from all over the 🌎 world…. And every year evidenced- based medicine salutes the Mediterranean diet.

Rich in vegetables, nuts, fish, and plenty of spices, tonight we made a plant- based Lebanese spread. Lebanon, one of the countries that border the Mediterranean Sea, next to Syria, boasts some serious good food. And while, our travels to this region include Portugal, Spain, South of France, Italy, Greece, and Croatia….there are so many yet to explore.

Cooking is our medicine. If we can learn how to incorporate more vegetables and fresh foods, western medicine loses, and that’s ok 👌even for this PA.

Tonight and taught us a tofu shawarma, hummus, garlic aioli, naan bread (gluten free), tomato salad, cabbage salad, potatoes bravas, baba ganoush, a salad, and air fried potato skins.

When I’m not working in the hospital, I’m working to keep myself, my family, my patients, and my clients out of the hospital.

Food is medicine and it starts with incorporating a wide rotation of fruit. Choose lower glycemic fruits such as any berries, 🍎 apples, and 🥝 kiwi.

Don’t forget those fruits that incorporate healthy fats like avocados 🥑 and 🫒 olives.

If only fruit stands were this convenient instead of vending machines and concession stands.

Challenge yourself this week:
1. Buy fruit that you normally would not buy to eat the rainbow!
2. Research the low glycemic options!
3. Eat one piece or 1 cup of fruit per day.
4. Ditch the fruit juice of all kinds- juice lacks fiber and spikes blood sugar=no good.

Lagos from the cliff top!

A 2 hour hike along the coastline of the Lagos cliffs. There is now a safe board walk to view but we didn’t find that until a quarter mile in with a 2 foot path and one jump to spare 🙈.

It was a beautiful day discovering the famous Dona Ana and Camilo beaches….with many others along the way….

For dinner we enjoyed ahi tuna and monkfish …another one to inspire us when we get home. Many restaurants are in the Old Town of Lagos where beautiful cobblestone streets continue for miles.

Tomorrow we will be exploring the coastline and caves by 🚤 boat.

We arrived in Lagos, Portugal…

We took the 530am train from Porto to Tunes (6 hours) via the high speed Alfa Pendular with speeds up to 140 mph, then hopped on a local train that stops along each Mediterranean coastal town (1 hour).

We arrived and went straight to the beach to unwind- had a wonderful first dinner .nopatio. I had a zucchini coconut milk soup with duck and Tim had the lamb. Spectacular!

Tomorrow, we head for the cliff walk to scope out the reason why we came. The famous beaches……

The Best of the Douro Valley

We started our day with a green fresh juice and an awesome breakfast at chic and gravity.

Then, we hopped on a tour with Julio with and headed first to the town of Amarante for some “green wine,” not green, but wine just not fully fermented. We enjoyed some Iberian ham, which is my favorite and hanging up behind Tim and I.

We drove deep into the Douro Valley and then enjoyed a boat trip. The boats are similar to the Venetian gondolas.

We ate lunch outside at Quinta dos Mattos known for their ports, which was best served over a chocolate type “Texas sheet cake.” Yes, we splurged!

Great conversation with our guide, Julio, who translated back n forth from English to French while his first language is Portuguese. A psychologist by trade, we had discussions about healthcare and the challenges we face worldwide to best serve our patients while trying to take care of ourselves. Julio has a big place in our ❤️s.

We ended the day at for some charcoal grilled octopus, veggies including carrots🥕, bok choy, and artichokes as well as steak tartare. 😋

The Best of Porto

We are bunking at chic and basic gravity- a very quirky place where everything is upside down. It’s an incredible place. We visited many points of interest and learned that the colorful mosaic tiles on many buildings are from the early Muslim influence - We visited the famous Sao Bento Train Station, described as the most beautiful in the world (we agree). This city has a historical feel with young energy. It’s like a walking staircase.

We continued our Mediterranean food journey at a place called enjoying octopus salad and seafood rice- I found my way into the kitchen to view their fish counter.

This vibrant city is not to miss.
