Roasted Beets, Walnuts, Goat Cheese & Mandarin Orange Arugula Salad topped with Pan Seared Lemon Chicken Breast with a drizzle of Olive Oil, Lemon Juice, and Balsamic Glaze

LOADED with lean protein, dietary fiber, antioxidants, and natural nitrates!

Recipe

- Roasted Beets
Pre-heat oven to 350F. Clean beets, remove the stems and leaves (but don’t toss because edible! Stems can use like celery and leaves can be sautéed with spinach). In roasting pan, spray or drizzle olive oil then place beets in pan and transfer oven. Bake for about 30-40mins or until tender. Allow beets to cool before removing the skin. Dice and set aside.
- Pan seared Lemon Chicken Breast
Thaw chicken breast - if large chicken breast butterfly into two pieces. In bowl, add 1/2 tsp olive oil and 1/2 tsp lemon juice (per chicken breast) and mix together then rub over chicken to evenly coat. Add seasoning of paprika, garlic powder, onion powder, oregano - serving size of seasoning based on preference. Put 1 tbsp of olive oil or avocado oil (higher smoking point than olive oil) and squeeze one whole lemon in skillet (remove any seeds). Turn range to medium to medium high heat and place skillet on burner. Once skillet is hot, add chicken and cook on one side for 5 mins then flip and cook for 3-5 mins. Turn heat to medium and check internal temperature. Chicken should be at 165F or higher when fully cooked. Let the chicken rest on cutting board then slice.

- Salad Assembly - 1 serving
Add 2 - 3 cups of arugula, 1 tbsp of chopped walnuts, 1/4 cup of mandarin oranges, 1 oz goat cheese, 1/3 cup diced roasted beets, 3-4oz chicken breast, then drizzle olive oil, lemon juice, and balsamic glaze and ENJOY!

408 Calories, 22 g Fat, 5g Saturated Fat, 252mg Sodium, 22 g Total Carbohydrates, 4g of Fiber, and 34g Protein

Did you know that fruit juice causes your blood glucose and insulin levels to rise more quickly than the whole fruit? The difference is fruit juice contains all the sugar (fructose and likely added sugar) without the fiber to slow digestion and absorption. Whole fruit has up to 4x the amount of fiber than fruit juice!

It takes about 3 oranges to make 1 cup(8oz) of orange juice. So get more bang for your buck with eating a whole orange vs drinking 3!

But let fruit juice have its moment. Need quick fuel for a pre-workout, have 4oz of fruit juice. Low blood glucose

As a dietitian and lover of food, I have to say my favorite eating practice is the Mediterranean diet. Swipe right to learn more about the Med diet!

Not 100% about it? No biggie, try incorporating one or two aspects of the Med Diet to get you started. For example, replace butter and lard with extra virgin olive oil, add a serving of fruit and vegetables to a meal, or switch refined grains to whole grains. Little steps in the right direction will eventually get you where you want to be.
