Strawberry Oat Bars πŸ“

Simple, fruity, and satisfying. Strawberries are a wonderful source of antioxidants and vitamin C, and this no-fuss recipe makes a lovely baking activity for memory care residents. The familiar rhythm of mixing and pressing dough can bring a real sense of calm and accomplishment.

Ingredients
πŸ“ 2 cups fresh or frozen strawberries, sliced
🍬 2 tbsp sugar
🌾 1 1/2 cups rolled oats
🌾 1 cup all-purpose flour
🍯 1/2 cup brown sugar
🧈 1/2 cup melted butter
πŸ§‚ 1/4 tsp salt
πŸ₯„ 1/2 tsp baking powder
🌼 1/2 tsp vanilla extract

Instructions
βœ… Preheat oven to 375Β°F (190Β°C) and grease a square baking dish
βœ… Toss strawberries with sugar in a bowl and set aside
βœ… Mix oats, flour, brown sugar, salt, and baking powder in a large bowl
βœ… Stir in melted butter and vanilla until crumbly
βœ… Press half the oat mixture firmly into the base of the dish
βœ… Spread the strawberry mixture evenly over the base
βœ… Crumble remaining oat mixture over the top
βœ… Bake for 30 to 35 minutes until golden
βœ… Allow to cool completely before slicing into bars
βœ… Serve at room temperature and enjoy with a cup of tea 🍡

We’re continuing our Earth Month celebrations by giving old canvases a fresh start.

Warm, gently spiced, and full of good things. This wholesome loaf is a springtime favourite that works beautifully as a shared baking activity. Walnuts are a rich source of omega-3 fatty acids, which support brain health, making this as nourishing as it is delicious. ✨

Ingredients
πŸ₯• 2 cups grated carrots
πŸ₯• 2 eggs
πŸ₯• 1/2 cup honey or brown sugar
πŸ₯• 1/2 cup neutral oil
πŸ₯• 1 1/2 cups all-purpose flour
πŸ₯• 1 tsp baking soda
πŸ₯• 1/2 tsp baking powder
πŸ₯•1/2 tsp salt
πŸ₯• 1 tsp cinnamon
πŸ₯• 1/4 tsp nutmeg
πŸ₯• 3/4 cup chopped walnuts
