Think you can’t cook? Think again. This Salmon & Lentil Parchment Bake is as simple as it gets—just wrap it up, bake, and enjoy! 🐟🥬
🌿 Fresh salmon, kale, lentils, cherry tomatoes, and a zesty cilantro dressing come together in a nutrient-packed, protein-rich meal that’s ridiculously easy to make. No fancy chef skills needed!
🔥 Here’s what you need:
🫒 1 tbsp olive oil
🍷 2 tbsp dry sherry (or white grape juice)
🌶️ 1 tsp cumin + 1 tsp sweet paprika
🌿 ½ cup fresh cilantro
🍋 1 lemon (zested & juiced)
🧄 1 tsp minced garlic
🐟 4 (6 oz) salmon fillets
🧂 ½ tsp sea salt + ¼ tsp black pepper
🥣 8 oz cooked lentils
🥬 4 cups steamed, chopped kale
🍅 20 cherry tomatoes (halved)
How to Make It:
1️⃣ Blend olive oil, sherry, cumin, paprika, cilantro, lemon juice/zest, and garlic.
2️⃣ Season salmon with salt & pepper.
3️⃣ layer lentils, kale, salmon, cherry tomatoes, and dressing on parchment paper.
4️⃣ Fold into a sealed packet and bake at 400°F for 25 minutes.
