New meal idea! ๐Ÿ’ก (courtesy of Erica Ochoa, NP)

This carrot salad is super simple to make, packed with nutrients and great for gut health. Itโ€™s cold, crunchy and refreshing! Just mix all ingredients together and voila. Make sure to also add your favorite protein as well ๐Ÿค๐Ÿ“๐Ÿซ˜

Recipe:
5 carrots, ribboned
1/4 red onion, sliced
1/4 cup chopped green onion
1/4 cup chopped cilantro
2 garlic cloves, grated
2 tbsp low sodium soy sauce
3 tbsp rice vinegar
2 tbsp toasted sesame oil
1 tsp honey
2 tbsp toasted sesame seeds
1 tbsp chili oil
1/3 cup cashews or peanuts, roughly chopped
