🥔🧀 Doctor’s Favourite Lunch – Simple & Healthy!
All you need:
✨ 3 eggs
✨ 1 small potato, thinly sliced
✨ A handful of cheese
✨ Spinach, tomatoes, spring onions & peppers
👩🍳 How to Make It – Super Easy!
1️⃣ Heat a little oil in a pan over medium heat
2️⃣ Arrange thin potato slices in a circle to cover the pan
3️⃣ Cover & cook for 10 minutes until soft and golden
4️⃣ Whisk eggs with salt & pepper, then pour over potatoes
5️⃣ Add cheese + veggies (spinach, tomatoes, spring onions, peppers)
6️⃣ Cover & cook until cheese melts
7️⃣ Fold, serve & enjoy 😍
