Stuffed Sweet Potatoes with Spinach, Avocado, Mushroom & Feta
🛒 Ingredients
4 medium sweet potatoes
1 tbsp olive oil
2 cups baby spinach, chopped
1 cup mushrooms, sliced
1 avocado, diced
¾ cup feta cheese, crumbled
1 small red onion, finely chopped
2 cloves garlic, minced
Salt & black pepper, to taste
Fresh parsley (optional, for garnish)
👩‍🍳 Instructions
Bake the sweet potatoes:
Preheat oven to 400°F (200°C).
Scrub sweet potatoes, pierce with a fork, and bake on a lined sheet for 40–50 minutes, or until tender.
Prepare the filling:
Heat olive oil in a skillet over medium heat.
Add onion and garlic, sauté 2–3 minutes until softened.
Add mushrooms and cook until golden and tender.
Stir in spinach and cook just until wilted. Season with salt and pepper.
Assemble the stuffed potatoes:
Once baked, carefully slice sweet potatoes open lengthwise and fluff the insides with a fork.

Did you know that extra weight can also affect your hands and wrists? 🖐️

A recent study found that people with a higher body mass index (BMI over 30) were typically diagnosed with carpal tunnel syndrome and trigger finger about 6 years earlier than those with a healthy BMI.

Other things that sped up the onset of these conditions included smoking and type 1 diabetes.

This suggests inflammation and metabolic stress may manifest as pain, numbness, or hand stiffness earlier than expected.

The good news is that taking steps to manage weight and improve movement can reduce stress on your hands and wrists. 👍
