These vegan spiced carrot empanadas are my Purim contribution this year:
Warm with turmeric, coriander, and cinnamon, served with a bright lime-cilantro sauce that makes everything pop. Savory, bold, and very at home on a Purim table next to the sweets.
Inspired by the idea that folded foods show up everywhere in the Jewish diaspora - sambusak, bourekas, knishes. A little dough, a flavorful filling, sealed and baked until golden. It just works!
