The lake always has a way of bringing me back to simpler times- eating veggies from the garden, spending time with family, watching the sunsets, floating in the water. It’s all so renewing 🙂

Allowing yourself a break from the hustle and bustle of daily life is so needed (even if it’s just finding a new ice cream spot)!

Working full time and cooking dinner is a STRUGGLE. I know this. That’s why I love simple meals like this one that are unique in flavor but also nutritious. Also, hooray for peaches! This cold peach gave me the life I didn’t realize I needed this evening 🤤

The secret to a satisfying salad is healthy fat + protein! You actually need the fat in order to absorb some of the nutrients. I’m all about a salad with tons of layers and textures. Here is one I ate almost every day for lunch last week:

Spinach + dandelion greens
Deli turkey
Strawberries
Goat cheese
H**p seeds (a sneaky source of plant-based protein)
Pine nuts
Creamy balsamic vinegar

If you couldn’t tell, this was heavily inspired by Dewey’s house salad. I conveniently had all the ingredients, but you can swap out whatever floats your boat: avocado, dried fruit, almonds, chicken, and more!!

I’ve always preached the importance of starting small- it’s something I learned the hard way.

I was stuck in this mindset of giving it all or nothing and then feeling guilty when I didn’t accomplish what I thought I should. Ergh!! Why do we do that to ourselves?? If you’re looking for some guidance and/or inspiration, pick this book up + find a relaxing spot with a comforting beverage and see where it takes you!

Cucumber caprese salad.

I just made this today for lunch and it was so convenient and extremely delicious so I thought I’d share:)

-8 oz. mozzarella pearls
-1 English cucumber
-2 c halved cherry tomatoes
-1/3 c fresh basil
-1/4 c olive oil
-2 T balsamic vinegar
-1-2 t pure maple syrup
-salt & pepper to taste
(You can also sub out the oil, vinegar, and maple syrup for store bought balsamic vinaigrette)

Mix it up and enjoy with a piece of crusty bread or add in chicken for some protein! This is a great anti-inflammatory meal as it is very hydrating and contains lots of minerals/vitamins/antioxidants. Enjoy!

In my last instagram post, I told you that new beginnings were most definitely underway.

My heart has practically been YELLING at me over the past few months and I decided that I just needed to do it… so I did it:) I published my website and made a blog post to kick off this new beginning of mine.
