Purple Velvet Cake
Ingredients:
For the Cake:
2 1/2 cups all-purpose flour
2 cups granulated sugar
1 cup buttermilk
1 cup vegetable oil
3 large eggs
2 tablespoons cocoa powder
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon white vinegar
1-2 teaspoons purple food coloring
For the Cream Cheese Frosting:
16 oz cream cheese, softened
1/2 cup unsalted butter, softened
4 cups powdered sugar
1 teaspoon vanilla extract
Directions:
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt.
In another bowl, combine the sugar, vegetable oil, and eggs. Mix well, then add the buttermilk, vanilla extract, and white vinegar.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Add the purple food coloring a little at a time until the desired shade is achieved.
Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
To make the frosting, beat the cream cheese and butter together until smooth. Gradually add the powdered sugar and vanilla extract, and continue beating until creamy and well combined.
Once the cakes are completely cool, spread a layer of frosting on top of one cake. Place the second cake on top and frost the entire cake with the remaining frosting.
