Go ahead and add this delicious summer salad to your meal plan this week πŸ‹πŸ«‘πŸ₯’πŸ«’

β€’ 1 cup quinoa
β€’ 2 cups of chicken broth or water
Cook the quinoa

Add in
β€’ 1 cucumber
β€’ 1 bell pepper
β€’ Quartered cherry tomatoes
β€’ Fresh parsley, chopped
β€’ Fresh mint, chopped
Crumble some feta cheese
Drizzle olive oil and lemon juice on top
Salt and pepper to taste

We are finishing up Week 9 of the 12-Week Workout Challenge, and you ladies have been doing great! Here is our giveaway at the end of the challenge: a digital food scale and Natural Vitality Calm Magnesium Supplement. I use my food scale all the time to measure out food portions. To me, it is easier to measure food by the grams than to use up a bunch of measuring cups and spoons when putting together a meal. Just zero the scale after each ingredient to take individual measurements!

This magnesium supplement is in powder form, and there are several different flavors, but sweet lemon honestly tastes like lemonade! I take it every night, and here are some great benefits of increasing your magnesium intake: Magnesium aids in vitamin D activation (which helps with the winter blues), improves muscle function, bone health, nervous system function, heart health, decreases feelings of anxiety and stress, can provide relief from headaches/migraines, and helps with regularity in the digestive tract.

I found a great article published by Cleveland Clinic explaining 13 common reasons for overeating. Ever think, "I shouldn't have eaten that?" Me too πŸ™‹β€β™€οΈ Losing some self-control around food is actually pretty common, leading to overeating habits. These are not healthy habits and can be embarrassing and lead to lower self-esteem. Being an embarrassment to yourself and having low self-esteem fight against you in your health journey, that's why this article explains ways to counteract each reason. Health Tip Tuesday ✨️

Have a sweets craving but don't want to over indulge? I made this edible brownie batter in just a few minutes and it was so good!! 🀩 I'm the kind of person in the kitchen that doesn't measure most ingredients, I just eyeball it (and usually do not put as much sugar as what any recipe calls for 🀭). But if you want precise measurements, here it is:

β€’ 1 15oz can of chickpeas (take a few minutes to pinch off the skins, it'll definitely help the texture)
β€’ 2-3 tbsp of almond milk
β€’ 1 tsp vanilla
β€’ 1/4 cup maple syrup (or however sweet you want it to be -- I probably did 1-2 tbsp)
β€’ 1/2 cup of nut butter
β€’ 1/4 cup of cocoa powder

Mix it up in a blender and then sprinkle in some dark chocolate chips!

This makes about 2-3 servings, so it makes plenty to enjoy with a friend or to put in a container in the fridge to enjoy later!
