Teriyaki chicken stir fry! 🤤I used Soba noodles but you can also use jasmine rice. This is a quick meal and perfect for left overs for lunch.

1 tbsp fermented chili paste
Low sodium soy sauce
Sesame oil
Directions:
In a wok with a little olive oil or large pan cook chicken till internal temp is 165. Then take out and wipe out wok.
Return wok to heat and put a little olive oil and add frozen veggies till thawed out and cooked. Then add onion, garlic, and ginger till onions sweat about 3 min.
Add back chicken and cooked noodles mix together. Then add a drizzle of sesame oil, chili paste, and soy sauce. For soy sauce add a little at a time until it’s to your preference in taste and mix till combined.

Hash brown chicken sausage egg casserole. Simple to make and perfect for leftovers. If you tend to forget about breakfast this is a great option. Something is better than nothing.
Ingredients:
5 whole eggs
5 egg whites (I use the ones that come in a carton)
2 cups frozen shredded hash browns
1/2 onion diced
1 green bell pepper diced
2 minced garlic cloves
1 package chicken sausage diced (I used red bell pepper flavor)
1 1/4 cup shredded cheese (I used Monterey jack cheese) save 1/4 cup to sprinkle on top
1/2 tsp black pepper
1 tsp paprika
1/4 cup almond milk
Directions:
Pre heat oven to 350 F
In a large pan sauté chicken sausage till brown about 5 mins. Then add frozen hash browns and cook for 8 min till it’s cooked and brown slightly.
Add in veggies to pan and garlic and just cook till veggies soften about 4 min.
Once cooked place mixture in a bowl to let it cool. If you don’t cool it then it will cook the eggs and you don’t want that.
In a separate bowl whisk eggs and spices till mixed.
Once cool add shredded cheese to chicken sausage mixture and combine. Then fold in the eggs till all is combined.
Place mix in a pan coated with some olive oil to prevent sticking.
Sprinkle extra cheese on top then bake for about 25 min. Finish with a broil of hi for about 3-4 min till top is crispy.
