How much have you lost eating Low Carb?

This is one of those recipes that makes staying on track feel EASY.

One Pan, Low Carb Taco Casserole 🌮🔥
High protein, low carb, cheesy, filling and takes almost no effort. Honestly… this is the kind of meal that helped me lose 70 lbs because it kept me FULL and satisfied without feeling deprived.

And the best part?
My family loves it too.

Here’s how I make it👇🏼

• Brown 2 lbs lean ground beef with ½ onion
• Drain and add taco seasoning
• Mix 16 oz 2% cottage cheese + 1 can Rotel
• Spread over beef
• Top with 2 cups Mexican blend cheese, jalapeños + green onions
• Bake at 375 for 20 mins

I love serving mine with Quest chips 🤌🏼

457 calories
42g protein
28g fat
8g carbs

Low Carb One Pan Chicken Dinner

I’ve lost 70 lbs eating like this and this is a meal even my non-low-carb family members love. My daughter made me make it two nights in a row, so that says everything. 😄

One skillet. Real food. Done in 30 minutes.
Full Recipe (4 servings):
Heat 1 tbsp butter + 1 tbsp avocado oil in an oven-safe skillet. Add 8 oz sliced portobello mushrooms, 2 tbsp liquid aminos, and 2 tsp dried thyme.
Cook 5 minutes, then remove and set aside.

Add remaining oil. Season 2 halved chicken breasts with salt, pepper, garlic & onion powder, then sear 3 minutes per side.

Pour ¼ cup heavy whipping cream over the chicken, top with the mushrooms, then layer on 1½ cups mozzarella and ½ cup parmesan.

Bake at 400° for 15 minutes.
That’s it.

Yes, I’m being dramatic and I don’t care. Today now marks the longest I have ever gone without seeing my son. While I’m SUPER happy for him, out in the wilderness, living his best life… I miss seeing his face and getting those BIG hugs he gives.

POV: you’re trying to eat high protein without feeling like you’re chewing on sadness 😂
This recipe is a breakfast option for me - great for my no caffeine before protein routine to manage cortisol.

This low carb cottage cheese toast was SO good and honestly way more filling than I expected thanks to the Lewis Bake Shop protein bread.

Recipe:
• 2 slices Lewis Bake Shop protein bread
• 130g 2% cottage cheese
• 1 egg
• 1 tbsp everything bagel seasoning

Mix together, spread on the bread and air fry at 375° for 7 minutes.

Macros for the whole recipe:
~270 calories
32g protein
11g net carbs

I fully planned on eating both…
Hubby ended up winning the second piece 😂

If you’ve opened the pantry 17 times today hoping a snack would fix your exhaustion… hi, welcome. 😂
