Low Carb One Pan Chicken Dinner
I’ve lost 70 lbs eating like this and this is a meal even my non-low-carb family members love. My daughter made me make it two nights in a row, so that says everything. 😄
One skillet. Real food. Done in 30 minutes.
Full Recipe (4 servings):
Heat 1 tbsp butter + 1 tbsp avocado oil in an oven-safe skillet. Add 8 oz sliced portobello mushrooms, 2 tbsp liquid aminos, and 2 tsp dried thyme.
Cook 5 minutes, then remove and set aside.
Add remaining oil. Season 2 halved chicken breasts with salt, pepper, garlic & onion powder, then sear 3 minutes per side.
Pour ¼ cup heavy whipping cream over the chicken, top with the mushrooms, then layer on 1½ cups mozzarella and ½ cup parmesan.
Bake at 400° for 15 minutes.
