Foraging season is in full bloom and our April wildcrafting class was pure magic! We wandered the land gathering fir tips, violets, and dead nettle, then learned to make wild pesto, infused salt + sugar, and other herbal treats. We also enjoyed a fresh garden lunch under the sun, full of the medicine we had just harvested!

There’s nothing like connecting to the earth in real time, tasting the seasons as they shift!

Springtime wouldn’t be complete without the soft, cheerful bloom of violets (Viola spp.)! These little purple blossoms are one of my favorite reminders that the earth is waking up — vibrant, alive, and full of possibility. But violets aren’t just a symbol of spring’s renewal; they carry a delicate, floral flavor that’s perfect for adding a dash of seasonal magic to baked goods such as these Violet Cupcakes paired with Swiss Buttercream and Lemon Curd, which also happen to be gluten free and dairy free!

Sweet and subtly earthy, violets bring a hint of wild elegance to baked goods, syrups, and desserts. But violets offer more than beauty — they’re a gentle yet powerful herbal ally. Traditionally used to soothe inflammation, support the lymphatic system, and bring comfort to dry, irritated tissues, these blooms are rich in antioxidants and nutrients. They’re often called upon to clear stagnation and restore balance, both physically and emotionally.

🌿Elderberry: A Mystical & Medicinal Ally🌿

Elderberry is one of the most widely used medicinal plants for its anti-viral actions yet few know of its fascinating folklore. In ancient Europe, the elder tree was believed to be the home of the Elder Mother, a powerful spirit that protected the tree and its surroundings. Cutting down an elder or harvesting without her blessing was thought to bring misfortune, which is why many would leave offerings beneath the tree to appease the Elder Mother and seek her protection. Elders were also believed to serve as portals between the physical world and the mystical realms of the Fae. Sitting beneath an elder tree at twilight was said to reveal glimpses of fairies or even transport you into their world.

Beyond its mystical ties, modern research has shown that elderberry helps prevent viruses from attaching to and entering cells, effectively slowing the spread of infections. In addition to its antiviral effects, elderberry is traditionally used to reduce fever, ease inflammation, and soothe respiratory issues like coughs and sore throats. The berries are also rich in key vitamins like A and C, which boost immune health. Apart from the berries, elderflowers are often used to treat seasonal allergies and respiratory conditions due to their anti-inflammatory and antihistamine properties.

Sambucus nigra from Europe or our native Sambucus canadensis as shown in the photo are used interchangeably.

• Antioxidant: Protects cells from damage by free radicals.
• Anti-inflammatory: Reduces swelling and inflammation in the body.
